Penicillin is right up there, but the ones i have been enjoying is the traditional recipes with a few slices of jalapeño to add a little heat in the background that pairs well with honey.
Nice video! My favorite honey cocktail is a "Bee on an Elderflower." It has St. Germain and prosecco in it. It adds variety as I try to use up my honey syrup.
Gold Rusher which seems to be in between a Gold Rush & a Penicillin with the addition of Fernet. Party Line which is similar to a Siesta & Naked and Famous. Canchanchara and Brazuca Remedy are two Cachaça cocktails but the later has only one bar spoon of honey syrup so it might not come through enough to be a honey cocktail. All four are dern good, and I'm always finding more from you and others who keep pulling back the veil and showing us something we haven't seen before. Cheers!
I often make "single serving" amounts of honey syrup (or simple, too...) with a shot glass and 10ish seconds in the microwave....stir and add to your tin etc.
Hi Steve, what a fun video! I always make my honey syrup 3:1 in the jigger pre mixing. The opposite of making more and keeping for a year! Nick from York
This is right up my alley! Just in time for the weekend. I do agree with the importance of the quality of honey. I cheaped out once and learned the hard way. Also need to try the rich syrup. I’ve been sticking to 1:1. Thanks!
Love the Penicillin. It really grew on me over time. Since I don't really need ginger syrup for anything else, I do it with freshly muddled ginger and a tiny bit more of honey sirup. Works too. Maybe worth mentioning, the honey itself leaves a lot of room for experimenting in all these cocktails. Different kinds of honey bring so diverse and unique flavours with them, they can give the cocktail a complete spin. I have been using a thyme/pine honey lately. It's fun (and tasty) to play around with such twists.
Lime and Rum, Lime and Honey; it's gotta bee the Honey Bee that I go to. Thanks for your sacrifice getting those crazy expensive limes for the video! Cheers
I love honey in my beverages. I use “Glory Bee” syrup (1-1 ratio) for my cold brew coffee in the morning. From someone in Arizona, $20 for limes is insanity. I picked up your book and will be trying these asap!
Love the three vids! Really enjoyed that you didn’t do 15 all at once as this makes the experimentation more manageable. I will do the Bee’s Knees / Gold Rush combo when we have friends over because of their different palettes and ease of just switching out the base alcohol. All that said, I think vid 2 peaked my interest the most.
I think the type of honey you use is pretty important here, as some honey syrup I made got lost in the cocktail and I couldn't really taste the honey. Not sure what kind of honey has nice and strong flavour though.
Good point, and if you're watching in Australia we have a plethora of delicious honey to choose from. I checked out Steve's syrup video and he used Capilano honey, which probably gives just a straight honey taste.
Did I create something new? Used a Southside template: 5 - 7 mint leaves, 3/4 oz honey syrup (I like the triple syrup, equal parts honey syrup, agave & simple syrup), 3/4 oz lemon juice, 2 oz Laird's Apple. Shake & double strain into a chilled coupe. garnish with floating mint leaf.
Gotta say the Gold Rush is one of my favorites as well. I use your 3-1 honey syrup mixture with local honey from my area. It’s great. I use Buffalo Trace, and I know you’ll probably say whatever you prefer is good as far as bourbon goes. I’m curious as to what is your favorite bourbon to use in your Gold Rush?
The Buffalo Trace we get here in Australia is only 40% ABV, heavily watered down so it gets lost in any cocktail. So I mostly go for Wild Turkey 101 or Bulleit Rye for a bit of extra spice when mixing cocktails.
I wish you had taken a minute to reinforce the thought that making honey syrup is more delicate than other syrups. Heating the honey too much degrades the delicate flavors of the honey. Especially if you're using a honey that's a step up from clover. I know you covered this before in the syrups episode. My trick for honey syrup has been to add the honey and warm water into a bottle, shake a bit, then warm it up in a baby bottle warmer. I'd been making bees knees most of the summer but recently switched to gold rush as summer has ended.
You triggered me with the price of limes in Australia right now! $3 each at the grocer I usually go to at the moment. Can't even find them in some of the supermarkets
A passable alternative to limes if it is prohibitively expensive, is to make superjuice with lime acid levels (adding malic acid) with lemon peel and juice.
I love bees knees. I just noticed you have a mat under where you make cocktails. I didn’t know about those. I never knew what to do when I turned the jigger over and then got the counter wet. Any tips in choosing one?
Steve, I'd love to know how different types of honey(clover, wildflower, orange blossom, etc) affect the flavor of the finished cocktail. Have you experimented with this and determined the best type to make honey syrup?
I guess Penicillin is my favourite, but I find it a bit hard to be consistent regarding the balance. I don’t drink enough (or entertain guests enough) to bother bottling ginger syrup, so I usually end up just muddling ginger and add honey syrup, which sort of is a hit and miss for me.
what do you think about using different kinds of honey for cocktails? i am a big honey enjoyer and have 50 plus different types and i can tell you they are all very different from each other.
As far as “style”? No.. I sometimes shake a little differently for no reason.. but as far as duration, yes. Some cocktails I shake less as I want to combine the ingredients without the extra dilution (such as the Shoemaker in one of the later honey videos).
One of my upcoming vids is about a superjuice replacement - definitely worth watching as it will be the lemon / lime replacement I’ll be using from now on..
Dude i’ve got the video playing on a bluetooth speaker by my head and can *barely* hear it. Long story short: it’s something on your end. Not the creator’s.
What is your favourite honey cocktail? 🍯
Penicillin is right up there, but the ones i have been enjoying is the traditional recipes with a few slices of jalapeño to add a little heat in the background that pairs well with honey.
Probably the Oaxacanite
"Brown Derby" ofcourse
Penicillin.
Penicillin all the way 💪
Bees Knees - breakfast of champions 😊
Canned mushrooms - the breakfast of champignons.
(But yes Bee's Knees is very nice)
😂😂
@@monotonehell indeed buddy. Just that our lens to look at things is different.
B'fast, lunch or dinner...Bees Knees never disappoints!
The Bee's Knees is a crowd favorite. I batched about 20 drinks for a party once, and it turned out excellent.
For sure! Simple yet so tasty!
Love the Penicillin as I adore peated scotch and Laphroaig 10 is bliss!! 🙂
Ha Ha. Thought you missed out adding the second Whiskey to the shaker after talking about it! Loves all the cocktails you showed.
Love a Penicillin especially as we head into autumn in the UK. We pay 0.58 AUD for limes here and can’t even grow them in our climate
Last week I paid over $2 USD per lime 😢
That smile, that damn smile.
It makes me weak at the bee's knees...
Try adding habanero bitters to your Bees Knees, it is incredible. Honey + Spice go so well together!
Nice video! My favorite honey cocktail is a "Bee on an Elderflower." It has St. Germain and prosecco in it. It adds variety as I try to use up my honey syrup.
I also can't have grapefruit, but I love the combination of honey and lemon. I'm looking forward to trying honey and lime!
To be honest, it’s my least favourite honey cocktail of all 15 so you’re not missing out 😂
Gold Rusher which seems to be in between a Gold Rush & a Penicillin with the addition of Fernet. Party Line which is similar to a Siesta & Naked and Famous. Canchanchara and Brazuca Remedy are two Cachaça cocktails but the later has only one bar spoon of honey syrup so it might not come through enough to be a honey cocktail. Bees Knees for a substitute of honey syrup I use Barenjager honey liqueur and rim the top of the glass with honey. 😊
The medicina latina has gotta be one of my favorites - the agave penicillin!
Glad you're paying attention to the grapefruit-juice-and-heart-meds thing, Steve! My prescriptions and I hear you! ^_^ Keep up the good work, eh?
I often make "single serving" amounts of honey syrup (or simple, too...) with a shot glass and 10ish seconds in the microwave....stir and add to your tin etc.
I want to try the honey bee. Bees knees is a lovely drink.
Really very easy, excellent cocktails without some special ingredients. Thanks a lot.
LOL I was on my second penicillin when i came upon this video. I really like using hot honey when i make penicillins.
Double spicy!! 🥵
Hi Steve, what a fun video! I always make my honey syrup 3:1 in the jigger pre mixing. The opposite of making more and keeping for a year!

3:1 all the way! Richer flavour, better texture and it lasts longer.
Love the Penicillin. It really grew on me over time. Since I don't really need ginger syrup for anything else, I do it with freshly muddled ginger and a tiny bit more of honey sirup. Works too.

Amazing personality for presenting his offerings 👏🙏💙
The Bee's Knees is my favorite by a long shot! Absolutely love honey. A plain spoonful is a delicious treat.
Bees Knees for the win here!
The Gold Rush.. so good 🤤🍯
One of my absolute favs!
Lime and Rum, Lime and Honey; it's gotta bee the Honey Bee that I go to. Thanks for your sacrifice getting those crazy expensive limes for the video! Cheers
Not a honey cocktail but I recently tried the “Sunflower”( from your You Tube) enjoyed that one. I did try the Gold Rush - also very tasty. ❤
Sunflower is a great drink too.
I love honey in my beverages. I use “Glory Bee” syrup (1-1 ratio) for my cold brew coffee in the morning. From someone in Arizona, $20 for limes is insanity. I picked up your book and will be trying these asap!
I’m not a fan of honey in coffee.. maybe I need to revisit.. thanks for grabbing my book! 🙏

Thanks Joe! The cocktails in ep 2 were so good!
21 AUD (14 USD) is crazy for 6 limes! Steve, you gotta make super juice at those prices!
Video about a superjuice alternative is dropping soon!
Canchanchara is my fav honey cocktail
I think the type of honey you use is pretty important here, as some honey syrup I made got lost in the cocktail and I couldn't really taste the honey. Not sure what kind of honey has nice and strong flavour though.

Pennington Daquiri is a good one.

I'd been making bees knees most of the summer but recently switched to gold rush as summer has ended.
Gold Rush for me. I like to sneak in a ¼ oz. of Cocchi Di Torino for added complexity sometimes as well.
My favorite version of the Bee’s Knees is the one from Death & Co. which calls for acacia honey syrup, lavender bitters and Luxardo cherry garnish.
That sounds excellent.
You triggered me with the price of limes in Australia right now! $3 each at the grocer I usually go to at the moment. Can't even find them in some of the supermarkets
$22 for half a dozen limes is INSANE. I'd probably just have to say goodbye to margaritas for a while ha.
Likewise but I need it for the vids (plus I can claim it on tax!).
A passable alternative to limes if it is prohibitively expensive, is to make superjuice with lime acid levels (adding malic acid) with lemon peel and juice.
I’ve made it before and I was 100% sold on the flavour. I’ve got a video coming out soon about an alternative to superjuice..
2:00 my last bottle of honey syrup went bad not due to mold but because I accidentally started to make mead!
I love bees knees. I just noticed you have a mat under where you make cocktails. I didn’t know about those. I never knew what to do when I turned the jigger over and then got the counter wet. Any tips in choosing one?
Lime prices are no joke! You have to get into the super juice 😂 at least with the peels!
That’s one of my next videos… a superjuice replacement!!
@@StevetheBartender_ haha, perfect! It’s worth trying in these trying times!
Brown Derby cocktail form me!
Might I suggest the Heaven is a Place/This is the Place (Imbibe’s Top 75 cocktails 2016)?
My wife made the Brown Derby a few nights ago. We too found it to be severely lacking acid.
100% agree.
Steve, I'd love to know how different types of honey(clover, wildflower, orange blossom, etc) affect the flavor of the finished cocktail. Have you experimented with this and determined the best type to make honey syrup?
Best to pair the flavours / notes with the other ingredients in the cocktails 👌
I guess Penicillin is my favourite, but I find it a bit hard to be consistent regarding the balance.
I don’t drink enough (or entertain guests enough) to bother bottling ginger syrup, so I usually end up just muddling ginger and add honey syrup, which sort of is a hit and miss for me.
22 AUD for some limes sounds insane! I live in the US, and our limes are only 50¢ each.
Ours are usually the same when the season is right.. just not now 😔
what do you think about using different kinds of honey for cocktails? i am a big honey enjoyer and have 50 plus different types and i can tell you they are all very different from each other.
For sure, pairing the honey with the other ingredients is the way to go 👍
"Accidently made" 👌
Hi Steve! Is there a reason that You shake different alcohols in a different way?
As far as “style”? No.. I sometimes shake a little differently for no reason.. but as far as duration, yes. Some cocktails I shake less as I want to combine the ingredients without the extra dilution (such as the Shoemaker in one of the later honey videos).
The CRAZY price of limes made me start making Lime Super Juice and now I'm not going back. The flavor is definitely more Limey and way cheaper.
One of my upcoming vids is about a superjuice replacement - definitely worth watching as it will be the lemon / lime replacement I’ll be using from now on..
Just showing off with actual limes
Steve! You could carve a turkey with that knife! Be careful.
Since I switched distilleries I make like 10-15 bee knees a week. Best way to kill your honey syrup is drinking more drinks
Is RAW honey a brand or is it to help Americans distinguish between the honey they naturally add cheese too
Raw honey is unpasteurised honey (not heat treated). Add cheese to honey!?
Dude. Get a lime tree. That’s what I did.
$21 for 6 limes, shit a brick. I think it's a lemon, malic acid and green food colouring job 😂
Lemon & Honey tastes like cough drops to me
Holy crap at the price of limes in Australia!! I often pay $0.25 USD each here in the US.
It’s usually cheaper.. just out of season currently.
21 dollarydoos!?!?! How???
I paid 6 €/kg for lime here in Finland just a moment ago, so your 21 €/kg is absolutely ridiculous.
$21 for 6 limes?! I'll stop complaining when I have to pay 80 cents each. Ouch!
Yeah, outrageous hey!
👏👏👏

Is it possible to turn off that background music? Very annoying. Couldn't watch till the end.
Are you watching on your phone, tv or with headphones? The volume is very low.
Dude i’ve got the video playing on a bluetooth speaker by my head and can *barely* hear it.
Long story short: it’s something on your end. Not the creator’s.
I had to literally turn my volume up and hold my phone close to my ear to notice the background music.
I think you left out the peated scotch float in the Penicillin
Almost… 👉 17:04
😳😳I hate to pay $1 per imported lime in Canada - you got that beat! 🍋🟩
