I think the size of the mixer is small to the quantity of the ingredients. If the mixer is big enough, there is no need to use hand inside the mixer while mixing . Just my thought as a baker I have a machine that accommodates 1 bag of flour. Great work. The Lord bless your efforts.
The mixer is accurate,, but there's something I don't like at the particular spot,, putting salt,yeast, different is not good,, every recipe should go immediately,,then while mixing he shouldn't suffer by bringing out flour that is under the mixing,,, what he should do is... pour half of the water at the center when mixing, then pour at the edges while mixing,,it will automatically mix one's,, and the dough has to be a little thicker.
@@nkiruanumudu992that's exactly what am saying too,, there are mixing 25g ones..wch is improper... and there forgot that putting enough water when it hasn't mixed well can result some mark of the bread wch shows is not smooth...

Small advice, the bread pans should be stored at least 6 inches above the floor, you can build wooden palettes and place the pans, never directly on the floor, the inspector can fined you
@Mary Emelogu example. In Canada and the US, we are not allowed to store or place anything directly on the floor, even if they're in boxes, it must be a minimum of 6 inches from the floor, so we either build something out of plywood or buy the ones made of pvc

madam this quantity of dough is too much for that mixing machine. if you use the right quantity, your staff does not need to manually join in the mixing process. if you continue this your mixing blade may break one day .
The mixer is narrow but maybe you could reduce the batch production by half. I use a 50kg mixer but can’t mix more than 37.5kg. So there is space. Mixing is back to back so no time to be helping the mixer to do it’s job. I love your bread color n the entire outlook of what you are doing. I wish that one day I can do a video. For now am still in the comment section. Wishing you more sales
I thought the same, though I am a home baker and do not have the same proportions. But, putting less into the mixer at one time will eliminate the need to keep stopping to redistribute the flour from bottomw to top.
