    Carrots are one of my favorite vegetables. They're a fantastic way to satisfy a sweet craving with a cool and crisp crunchy bite either on their own or while sipping into a dip of your choice. But the thing that takes them to the next level is roasting them, until they become soft like butter and their flavors produce an almost caramelized, candy-like flavor. All it takes are six (or seven) ingredients and minimal work to put this side dish that is roasted carrots on the table - and they will be raved about. As a bonus, I not only tell you how to do this in your oven, but in your air fryer as well!

    Love this recipe. An additional step we will add real butter and add about 1/8-1/4 cup of bourbon (cook off the bourbon). The flavors are even more incredible.

    I roast carrots on nonstick foil instead of parchment paper. To reduce cooking time, I cover the pan with foil for the first 15 minutes, then uncover and cook for 30 minutes. Roasted carrots are the best!

      Do you mean aluminum foil? Parchment is a great non toxic alternative:)

    Want desert? Do the same thing with sweet potatoes. Use coconut oil instead of olive oil. Apply sugar substitute and cinnamon like the carrot spices. Bake in oven at 450 degrees for 15 minutes. Turn over slices and bake for another 10 minutes. Serve with a glass of cold milk or milk substitute. You're welcome.

    It's nice to find a recipe like this that doesn't use rosemary. Almost every recipe I come across uses rosemary, which overpowers, instead of brings, out the flavor of the vegetable.

    I actually did make them that day! They were amazing! I had them with honey ham, and mashed potatoes. I even made some extra dishes for my lunches for the next week or so! :) These we’re so good! :)

    These look great! I've actually used your blackened chicken recipe as a protein add for some pastas, but these carrots would make a great side for the chicken! I hope you have more recipes that can used as side dishes in the future because it's really upping my cooking game!

    My mom used to make carrots like this. Then she would serve them as a dessert with a scoop of vanilla ice cream. So good!

    Don't peel them

      No need to peel if they're organic. Just soak in baking soda or vinegar for 1 minute and It gets all the dirt off
