    Chef John, I have given out this recipe to literally hundreds of customers, I work at a grocery store, and I tell them about your site all the time...these are fantastic onion rings...I've made them several times...YUM!

    Oh damn you. Now I have to put pants on and go get Panko, instant potatoes, and club soda. I am a Onion Ring junky and this recipe intrigues me. They will go nicely with my dry brined pork chops and wilted spinach salad. This whole meal is going to harden my arteries but I will eat salad for the next three days and not feel a moment's guilt. Thank you for this recipe I will try and only use it twice a month but no guarantees.

    This recipe is all I could hope for out of an onion ring. I was doubtfull that the rings would stay crispy as long as they were portrayed to, but I was wrong. THIS IS A LEGIT RECIPE!!! I cooked them about a week ago and my wife requested them on Mother's Day. Thanks for sharing them Chef John.

    Very crispy indeed. I found that dredging the onion rings in flour before dipping them in the batter enabled me to get more batter on the rings. Had difficulty with the batter sticking to the rings when I did not do that.

    I soak my onions in a milk bath before going to the batter, it helps the crust stay on the onion while frying. Also I like Beer in the batter instead of Soda. I also prefer using some corn meal and flour salt and peppered. Some store bought dry rubs and Cajun fish batter is also good just add your beer. Pour in about 1/2 of a beer in the batter depending on how many you are frying. Then drink the other 23 beers.

      I used Progresso panko bread crumbs. They wouldn't stick, too large I think. Thanks for your idea. ; )

      Kikkoman is the only brand of Panko I'd use for these onion rings.

    I don't have club soda. Could I substitute orange juice for it? Would that ruin the recipe? Also, I don't think I have instant mashed potatoes, so I'm going to substitute powdered milk instead, because they look similar. Also, would it be okay to substitute sliced grapefruit for the onions? I don't have any onions in the house, you see, and I don't want to actually purchase an ingredient required in a recipe at a store; rather I would prefer to make ludicrous and inappropriate substitutes and then act confused when the end result is disappointing. Also, my dad told me that cooking with oil is unhealthy, so instead of oil, I'm going to use a mixture of plain water and Windex.
    Wish me luck! I'm sure the recipe's gonna be delicious!

      WastedPo oh my gosh, I'm dying here! 😆😂😆 Though suddenly the thought of deep fried grapefruit rind doesn't sound that crazy!! On the other hand I think the Windex is up to temperature and it may be giving off some vapors.... LOL

      When I make the onion rings, the panko crumbs start clumping together after using three four rings. After getting wet and clumping together the panko crumbs don't stick after that :( how do you make his recipe work perfectly?

    Just finished making this. It was beyond delicious and super crunchy. I was looking for a Red Robin onion ring recipe but this recipe made the onion rings taste way better. THE ONION NEVER SLIPPED OUT THE BREADING CRUST!

      The reason the onions slip out is because they have too much moisture in them. If you put the onion ring slices in the fridge for 4 hours or so it dehydrates them enough that they won't slip out. Alternatively, before dredging in the wet batter, put them in corn starch before. The corn starch will soak up any excess liquid from the onions allowing the batter to stick better and fry up better without getting the dreaded onion slippage after they're cooked.

    I made these tonight. Since I did not have all the ingredients available, I had to substitute corn starch for potato starch and therefore used a little more cola to get the same consistency of your batter (also used some paprika and hot sauce instead of cayenne pepper) and the rings came out perfectly. Thank you so much. I will try this batter for deep frying other stuff in the future.

    Chef John - I did as you said - I had both flours - I had Panko - I had Soda Water - I had an onion - I did not have the powdered potato but I went ahead with great success - my best ever onion rings that stayed nice and crispy.

      It's all about the bubbles. Beer would give you the same result. Poring the soda in a shaker and giving it a shake, before making your batter, will make even crispier rings.

      It's a well known trick to get the batter fluffy...the other is use beer as the heat will boil the alcohol away, reducing the amount of liquid and thickening the batter when frying... and still getting the beer bubbles in :-)

    Many supermarkets keep the panko in the international or Asian aisle, not with the the regular bread crumbs. That may be why people have trouble finding it.

    Just a side not guys, ive made these probably 30 times and ive found u can add in 1 heap tablespoon of whatever flavored spice u want and wow, transformed. my favorites are garlic/lemon pepper half and half and my recent fav is spicy montreal steak seasoning. its so good. Thank u chef john for this superior onion ring recipe...best in the world no lie :)

    Update: I used 1 boiled mashed potato (for the instant potato) for the tempura batter and very little club soda because the potato has so much water. I also replaced the Panko with just smashed up Goldfish crackers, which worked, and created the crunchiest breading ever for deep frying. :D

      *Panko* (パン粉?) is a variety of flaky bread crumb used in Japanese cuisine as a crunchy coating for fried foods, such as tonkatsu. Panko is made from bread baked by grinding the dough to create fine slivers of crumb, *yielding bread without crusts*. It has a crisper, airier texture than most types of breading found in Western cuisine and resists absorbing oil or grease when fried, resulting in a lighter coating.

    I did everything the right way, but for some reason the batter wouldn't stick to the onion. Does anyone have an explanation?

      Your onions were probably too wet to begin with. Try drying them first with a paper towel so that the batter will stick.

      You can coat the onion rings on flour before dumping them on the batter. That helps the batter stick.

    I like to marinate my onions in buttermilk, garlic powder, onion power and salt for 30 mins. before dipping them in a batter. It makes it more savory.

    I found this exact same recipe a couple of weeks ago and tried it (I used Vidalia Onion), LOVED it. So easy, perfect onion rings, very tasty. So good that two nights in one week I had an onion for my supper. LOL I was astonished to find this video but I will credit Chef John when I share his recipe. It is absolutely wonderful! Thank you for posting! (Also makes the house smell heavenly!)

    Love your videos. Your recipes are incredible and easy. I have to try this, I just found it. I made your depression-style bread and butter pickles, FANTASTIC. I used the brine to make a three bean salad with onions sliced carrots, sweet peppers and cauliflower florets. I canned three jars and It was spectacular,

    Today will be my first time making onion rings , I use potato flaks for a thickener a lot so this appeals to me . I'm refrigerating the onion that will be used which may make the tempura stick better yet . I have xanthan gum but I am excited to see how to potatos work in this .

    A few suggestions and a few changes that might be found helpful. Mix the bread crumbs as a combination of Panko AND seasoned regular crumbs. Make sure club soda is cold and freshly opened. When placing the battered rings into the crumb mixture, press them into the crumbs. CRITICAL STEP: This might help those who can not keep the crumbs on the battered rings. If and when the crumbs become lumped together and difficult to move about the pan, DISCARD them and replace with a fresh mixed bread crumb mixture. If this is not done, the crumbs will likely not stick properly to the rings. When finished coating the rings with the crumbs, place them all into the refrigerator for a minimum of 1 hour. Two or three hours are even better. This allows the batter to set and stick better to the rings when frying. When introducing the rings to the hot oil, slowly let them slip into it. Do not just throw them into the oil as this could eventually break off the batter. I found my rings cooked in well under 2 mniutes. Your mileage may vary. Hope these comments and changes are of some help to folks.

      You can blitz the panko in a food processor once or twice to make them a little finer and they come out crispier. No need for seasoned bread crumbs if you do this.

    These are FANTASTIC, make sure you salt them, they are bland without salt. And the best with salt.Truly super crunchy and crispy , WOW !
