    Today I’m sharing my quick and easy vegetable and chicken breast stir fry noodles recipe. This chicken noodles recipe is super versatile and can be tweaked as per your liking. You can also change the chicken breast to any other protein source, add more vegetables or skip the noodles to turn this into a low carb chicken stir fry. Try this healthy noodles recipe for your next meal and you’ll be adding it to your weeknight menu before you know it!

    *INGREDIENTS:*(2 servings)
    100g noodles (any kind works)
    2 chicken breasts
    1 tsp light soy sauce
    1/2 tsp garlic
    1 tsp cornstarch/cornflour
    2-3 tbsp cooking oil
    Vegetables:
    1/2 red bell pepper/capsicum
    1/2 green bell pepper/capsicum
    1 small carrot
    1 small broccoli
    2 green onions
    Stir Fry Sauce:
    1 tbsp light soy sauce
    1 tbsp dark soy sauce
    1 tsp sugar
    1/4 tsp black pepper
    1 tsp garlic paste
    1/2 tsp ginger paste (optional)
    1/4 cup water
    1 tbsp cornstarch/cornflour
    (Taste and adjust salt if needed)
    ______________________________________
    SUBSTITUES:
    No dark soy sauce?
    Replace with 1 tbsp light or regular soy sauce + 1 tsp sugar. The noodles will have a lighter colour than in the video.
    No light soy sauce?
    Replace with regular soy sauce
    No cornstarch/cornflour?
    Replace with 2x all purpose flour
    What other vegetables can be used?
    Cabbage, snap peas, snow peas, bok choy, mushrooms, bean sprouts.

    TIPS:
    • Spaghetti noodles work great for beginners as it does not break or turn mushy easily
    • Ensure the noodles is only 70% cooked. It should be soft on the outside but hard on the inside. It will continue cooking while stir frying
    • Ensure the noodles have cooled properly before stir frying or they’ll turn mushy
    • The glaze is caused by the cornstarch in the sauce so I highly recommend not skipping it
    • Don’t cook the chicken for too long in the beginning. Add the veggies once it gets a sear so that it’s not overcooked at the end
    • The stir frying needs to be done in high heat so the vegetables don’t steam and turn soggy

      After the chicken and before the broccoli. You can add right after the chicken turns a bit white.

      No, tomatoes will make it mushy. If you want a tomato flavor, you can add some tomato paste/sauce to the stir fry sauce.

    My mum has been making this dish from a very long time, we call it chowmein. But usually it's cooked without chicken, since I'm vegetarian. Usually served in normal parties. Really tastes good. People should definetely try it !

    I didn’t have broccoli and red pepper. So instead of them I added onion and chili pepper. It was really good. I recommend adding onion it’s making the dish very tasty. And if you love spicy foods you should try to add chili pepper. Thanks for the recipe. It was really delicious. ❤️

    Well I wanted to post some pictures of it but seems like I can't. Oh my gosh this came out fantastic and I tossed my noodles with sesame oil and garlic in a different pan because I'm serving six people it was too much for one pan. Amazing thank you so much

    I’ve always cooked at home since I remember and finally dared myself enough to join a restaurant kitchen as a chef now a year later I can say it’s the hardest but most rewarding job I’ve ever done it’s no longer a job it’s a way of life it’s changed my life, give it a go if you have the passion you can change your life too but beware it’s stressful and not an easy mountain to climb but trust me it’s worth it in the long run chefs comment x

    hi! what to do if i only have light soy sauce and not dark? is the sauce going to be too thin?

      It's okay to use light soy sauce but the colour will be duller. For thickness you can increase the cornstarch by a little. I've mentioned a bunch of substitutes in the pinned comment. Hope that helps ❤️

    Dear is there any taste difference between the light and dark soy sauce?

      Light soy sauce is salty and dark soy sauce is sweeter+gives colour to the dish. If you want substitutes, I've written it in the description box and pinned comment ❤️

    I used kikoman soya sauce for dark soya sauce . My noodles did not look dark like yours nor did I get any glaze. I wonder where I went wrong? 😞

      Kikkoman won't give you a dark colour as it's regular soy sauce. You'll need to use dark soy sauce (I use Lee kum kee).
      The glaze is formed by cornflour and water mixed with the sauce. If you added them and didn't get a glaze, you may need to add some more.
