I tried the baking soda method with meat loaf yesterday and came out great! The moistest and juiciest meatloaf I ever had! It works! So I’m a try solid beef next.
My mother told me to use baking soda for meat many years ago. I make oxtail in 1.5 hours on a stove.... no pressure cooker..... and the meat is very tender
The baking soda trick works well with all meats. 1/2 tsp to every 1lbs of meat. Let it sit for 15 minutes. Then season and cook as desired. Exceptionally good with hamburger.
@@daschundloverable no need to rinse. Baking Soda is nothing more than Sodium Bicarbonate. 1/2 tsp in 8oz of water and it's instant stomach acid relief. Leaving it in the hamburger or on any meat is harmless and so little will not influence the flavor. The hamburger will be as tender as the the bread. An amazing difference.

This tenderizing meat meal looked like fun to make. What a nice evening it would make to have a gathering where the cooking of the meal was a large part of the entertainment! Add some music and maybe a place to sock hop, and it would make a full evening.
I do the same but I rinse the meat with a water and a splash of vinegar solution once the meat feels kind of squeaky then I know the baking soda is all off then I rinse the meat with straight water and dry off it’s definitely worth it

In a Chinese dish, the meat is always covered with cornstarch which gives it a shiny film. This recipe is a German adaptation (Salatgurken!!) which probably has its own merits.😉

Mal abgesehen von der sehr guten Rezept-Idee: beim Anbraten des Fleischs würde sich eine große Schmorpfanne besser machen, wenn man die hat. Aber auf jeden Fall sollte man auf Metall in der beschichteten Pfanne verzichten! Es gibt sehr gute Kunststoffwerkzeuge, oder auch mit Silikon beschichtete Metallgeräte, mit denen man seine Pfanne schont. Da ich persönlich nicht so der Salat-Typ bin, wünschte ich mir hier mehr Gemüse in der Pfanne, und ein schöner Basmati- oder Jasminreis dazu. Damit wären wir in der asiatischen Schiene. Also käme für ich eine Marinade mit Sojasoße und chinesischem Kochwein, und als Soße zum Glasieren eine Mischung aus heller und dunkler Sojasoße, Reisessig, Stärke, ... dazu, also in Richtung Kung Pao.
Papaya puree will tenderize faster. A little goes a long way. If one leaves it on for longer than 5 minutes you will risk disintegrating the meat. Experiment with a little bit of cheapest cut available till you master your tenderizing flavors to accent papaya.
I really have many reservations about this video, being a cook of Asian foods for 4 decades. The marination is important, but why subject a good cut of beef to more than one process?
