This time, Chef Modegi, the third-generation owner of Taimeiken, established in 1931 and loved in Nihonbashi, Tokyo for 90 years, introduced us to his pork cutlet.
- Ingredients:
100g to 200g pork loin
Flour as needed
Coarse breadcrumbs
200cc milk
5 beaten eggs
Salt ,to taste
White pepper, to taste
10g mustard
Tonkatsu (Chuno) sauce
2 tbsp ketchup
2 slices of bread (6-slice pack)
[Sandwich butter]
10g mustard
30g butter
[Sandwich sauce]
40g ketchup
200g Worcestershire sauce
[Frying oil, blended in 1:1 ratio]
Taihaku sesame oil
Corn oil
