I think you handled it well. I would've just made sure on the flop that you knew how much you're playing for. You handled it perfectly now that you won, but had you lost, and been forced to pay the extra, it could've gotten awkward. So you can just say that, "hey, can you leave your full stack on the table. So we know what we're playing for." And that would be the end of the discussion there.

The TT hand you don't think just piling all the money in on the turn is better? If he has A7, K7 diamonds or any other flush that bricks he can get away on the river whereas he would be forced to call off on the turn and if he folds on the turn then that's okay too vs the flush draw. Very nice of you to not have him pay the rest though!
A5 spades hand - I feel like I make this mistake too. Either we should 2x the pot or give up. Definitely 2x the pot if you're as confident as you seem in your analysis that he's capped.

I would ask for a count, the dealer or the table would no doubt speak up, make him put all his chips back on the table, then I would call. If he has the nuts, so be it. Players do not learn unless there are consequences for their actions. It would have been a valuable lesson for him. As it was, I’m not certain he learned anything.
Not to be 'that guy' but you or dealer 100% should have called a manager over and got a ruling on the guy from hand #1. Idk your venues rules but i've seen multiple results in this situation. Most commonly the stack on the table when cards are dealt is the stack in play for the hand. Sometimes they are asked to put original stack in full back on. Sometimes their hand is voided. Where i play making him add chips during a hand would contravene gambling regulations and had it escalated that far the consequences get quite serious. Always best to get an official ruling and play the hand from there. Which is not to say you've done anything wrong nor has the villain deliberately cheated.
