Ya he preparado este pastel muchas veces! Siempre delicioso. No tenía yogur, le puse leche. No tenía 🍓, puse uvas sin pepa, durazno en almíbar, 🍎🍏, incluso tutti frutti. Lo preparé sin fruta o con un poco de fruta y quedo igualmente delicioso. Con fruta es como un kuchen, sin fruta es un queque y puedes poner nueces, almendras, pasas. I’ve made this 3 times. I’m going to try pears and skip the lemon this week since it’s winter. We use whole milk kefir since my hubby is lactose intolerant. I use a little less sugar and don’t too with sugar. That’s just my taste. It’s a wonderful cake. It tastes like vanilla even though there is none!

My 1st attempt with this recipe was a disaster! The cake didn't bake inside after 60 min @ this temperature & sunk when it cooled down. 😣 I decided to try one more time & did some research online for key details. 1. All ingredients must be at a room temperature. 2. Beat eggs until white & fluffy, incorporating as much air as possible. (high speed if using an electric mixer) 3. Add sugar (I added 2 full tablespoons at a time) until the mixture is even paler & it traps even more air. 3. Add oil gradually. (low speed if using an electric mixer) 4. Add yoghurt gradually - a tablespoon at a time & switch to gentle mixing with a whisk. 5. Add flour gradually - 2 tablespoons at a time & gently combine with the mixture. I baked the cake for 45 min @ gas mark 5, but this is very specific to my oven.

@Bel putting the fruits on the top instead of mixing with a dough prevent the cake from being too moist but blueberries shouldn't be an issue
