I gave my old figs a haircut in January and removed probably 80% of 3 trees. I removed shoots, last year's growth, that were 10' long.

I've seen lots of old fig trees 30-60 years old thst were 20 ft tall and 30 ft wide people's back yard in south Alabama. I used to climb my grandfather's when I was a boy in the 70s

Mine that I got from you grew 3 foot as soon as I planted it , I planted it in a syrup tub made into a wicking tub … no figs yet though

I had a 20 year old fig tree with a trunk diameter around a foot. I removed it and all my figs around 10 years ago. I'm replanting two fig trees this year to experiment with different pruning techniques to keep them small and manageable.

It's actually really productive. We get lots of jelly from it every year. I do prune it a little each year to keep the limbs from hitting me when cutting the grass.

They'd need to be planted in a pot and brought inside during the winter.

If you have a place to put them that isn't much below freezing they'll probably make it. If the roots freeze they're done. The branches can freeze and they'll come back from the root after they are 2 years old.
A sort of heated garage might do

Depends on the variety, but most will make figs in the second year.
