This is a must try recipe. And seeing the snippets of Arran reminded me that I used to play a tune on the pipes, aptly named Arran Hills. It was composed around 50 or so years ago by a chap named Scotty Wilson, who lived out his latter years in Western Australia. He was a very good keyboard player as well as a composer.
A Scottish butcher here in Perth Australia has now added macaroni pies to his Cafe menu. I never knew of these until just recently. They Seem to be making a comeback. Thanks for the recipe Cheryl. I followed your scotch pie recipe. Just tasted wicked . Xxx

Another easy way of removing the excess pastry off the top is to use a rolling pin. I love adding English mustard to a cheese sauce as it helps to bring out more of the cheese flavour. These pies look amazing x
Oh delicious. I would love to see you do Scotch pies. My father used to say that when he was a butcher's boy in 1940s Edinburgh he would put his thumb in the bottom of pies and remove some of the meat before delivering them!
I can't believe I never heard of these, being from Tyneside and almost an honorary Scot! But we did leave for Canada in 1967, maybe it was after our time? I do love hot water pastry, and you made it look so easy. We did always have the pork pies, happy to say. 😊

I laughed out loud when you said you were glad the recipe did not call for puff pastry, since if you start making that when you're 32 you don't finish till you're 35. Isn't that the truth! I made puff pastry ONE TIME in my life, and that was ENOUGH. My mum, a Liverpudlian, supervised me when I was about 15 years old one wintry day in northeast Ohio, and decided I wanted to make it. She told me it was a hell of a lot of work and I, in my infinite teenager wisdom, scoffed. Well, that was that - she was going to have me make it, and learn exactly what was involved, which took the whole damn day! NEVER AGAAAAAAAAAAAIN do I want to make puff pastry! If you learn how to make the crust for these pies you can put anything in them for a portable snack. I’ve seen BBQ pulled pork, Lasagna, Steak and Plack pudding, Chicken curry all in this pies form 😂
No, we don't have them ready to eat, but they look easy enough to make. I just made beef stew and fresh crusty bread to go with it and this looks like a breeze in comparison 🙃

I’ve never had macaroni cheese pies, they look delicious! When you said how long it takes to make puff pastry, reminded me of Sarah Kennedy’s joke about sprouts for Christmas dinner...it used to be that the sprouts were put on a low heat to simmer, in October 😂🤣
Your hilarious, puff pastry is labor-intensive though. What a great crust, lard probably gives it better flavor than the Crisco we have in the States. Looks so delicious. Have a great weekend Cheryl.

We were able to get Scotch pies , a definite favourite from Morrison’s in East Anglia a few years ago but then they disappeared. Now on holiday in the highlands and I have enjoyed a few from the butchers. It certainly will be handy if you can do them as your macaroni cheese pies turned out very well. My grandfather is Scottish. He would make all the Scottish dishes. He married my grandma who was a Mennonite. I make homemade Scottish dishes and Mennonite dishes. I find out the my family coat of arms. I am going to write out of all the Scottish recipes for my kids so they can make the Scottish dishes for they family.
Do you ever eat beef ham. We used to eat it all the time when in Stirling at my nans, but its seems lots of other parts of Scotland have never heard of it. Its wafer thin silverside or topside of beef coated in spice mix and fried with onions and served with mashed potatoes. Its really good.

Cheryl, I was always told that hot water pastry was a black art, one for professional bakers. Looks like you've exposed *that* as a myth. That looked completely do-able. 👍😁👌 Years ago, I had a supplier who would send me Scotch pie shells. They were great (not expensive either) but had a nasty habit of arriving 𝒃𝒓𝒐𝒌𝒆𝒏. I think I'll be giving these a go. I'll need to get some Cookeen though, as the wife never uses the stuff. An old favourite of mine was Chilli con Carne pies, made with the pre-bought shells; these can go back on the menu now, Thank you.😁 Cheers for now, Dougie.

Cookeen is vegetable shortening the same as Trex. Great for nice flaky pastry. I use it a lot.
