Northern pike is excellent fish for deep frying and in Finland you can catch it everywhere. The meat is white and firm and tastes nice. For some reason there are fishers, mostly older ones, who tend to throw them away.

That looks amazing. In England, we'll usually just get the entire fish. It's good you have a good appetite but if you don't it can be a bit much. Cutting the fish up before frying was a good idea. Mushy peas are also a good condiment that work well with this dish.

+Echo41 what is the purpose of serving Fish and Chips on newspaper in the UK? I heard someone say there was a reason behind it and that it isn't true Fish and Chips unless its served on Newspaper.
I think it was just a cheap and easy alternative rather than paying that little bit more for boxes or plastic trays. They stopped serving it in newspaper years ago, though. Something to do with the ink on the paper contaminating the food.
I want to be the second guy that's in all the videos, who just chills out and eats half of the Pit Master's food every time. Let me know if he's thinking about retiring any time soon and I'll send in my resume.

Pro-tip from Belgium for your chips: fry them in 2 steps. First +/- 5 minutes (depending on the thickness) at 160°C (320°F).Still yellowish after this step! Then +/- 2 minutes at 180°C (350°F) until golden brown Soft on the inside, crispy on the outside, the way it's meant to be ;)

Hey guys that's awesome. if you have the time have you tried double frying your chips? 1st run through at about 250-270F for 5 mins or so 2nd run through at 350F till golden brown its a good way to get a nice crispy chip thats still pretty moist inside. its not rocket surgery theres a bunch of videos on youtube on it Takes longer yes but seems to work taste wise too.

I recommend getting those crispy batter drippings out of the oil with a slotted spoon after each batch of fish. They taste great and if you leave them in too long, they will burn and ruin the oil.

I did not know you could get Moosehead in the US. You should try the Moosehead Premium Dry Ale. And if you have access to Rickards, you could try Rickards Red for a redish tinge that looks awesome on the plate
Dude, looks good. You need malt vinegar though!!! British fish and chips is always served with loads of vinegar drizzled over it, then a bit of salt. Love the idea of SPG in the batter, I always find traditional beer batter could do with a kick but when I asked our local chippy about trying something to zing up his batter he looked at me like I was mental! :-)

Nice fish & chips ! You guys should try to make your fries in beef fat instead of vegetable oil...that's the way we do it in Belgium and it's amazing !

From an Englishman I recommend flouring the cod prior to battering,helps the batter stick.

You can boil the chips for a few mins first to soften up th eoutside. When fried you get super crsip and crunchy skin.
