I remember when I worked a pizza shop that suffered a tornado hit several years before I was hired, decided to turn their pizza dome into a fire line island on one side for the bar patrons and kept half of the broken dome for pizza. It was fantastic to be able to pass back and forth across the updraft items that normally wouldn't see any flame. Baked potatoes and corn were two big sellers that used to be made in the gas oven , steamed asparagus was now flame kissed - etc. Awesome to see it still being used.
I’ve worked in some hot kitchens, the first place I worked was a steakhouse and we would get up to 125 on the kitchen in the summer, I can’t imagine how incredibly hot this must be! Got to have those tempered hands😅
Nice to see you guys do the potatoes right. By pressing them like that, you let the oil actually get into the potatoes and give you that nice cook throughout.
Are those carrots or sweet potatoes? What are you tossing on them when you pull them out? Sugar, salt and Cinnamon? You kill it, keep up the good work.
