I do prefer the medium sized shrimps but it has to be newly cooked so that the shells are crispy. And also apart from shrimp, it can also be made using anchovies or dulong. You can even add tofu instead for a high protein vegan version.
You can replace flour with gram flour "besan " and could turn this into nutritious crepe with added proteins as we do here in india . You can also stuff cottage cheese in between , even better ❤

You should try North-eastern Indian (Manipuri) fritters once 👍. I mentioned this coz I am Manipuri. Herbs you can dip in the gram flour batters lemon basil leaves and it's flowers, banana flowers chopped, chives, green onion, even pumpkin flowers, Also there are veggies fritters too We used varieties like potato, onion, lady finger or okra, pumpkin, brinjal or egg plants, green chilly (big ones)..
We also have something similar in Indonesia, it's called bakwan! But instead of squash, we use cabbage instead and add some chopped green onion, Perfect ✨

Okoy has tiger shrimp or any shrimp originally depending on ur location but the veggie version also tastes good. We live near the ocean so it's 80% shrimp with veggies 😅

In Greece we have something similar but we use orange pumpkin for sweet ones and zucchini for the more savory ones those are more popular
