Professional pastry chef/Baker here, a lot of these are just here opinion and some I disagree with. Don't be discouraged by her saying you need to be good at math and lift 50 pound bags. Just need to be half decent at both.
Actually you do that's how people end being glorified cake decorators. Knowing themath and science behind what you're doing allows you to understand how to Actually develop recipes and understand problems your facing during each stage of baking, and you say you don't gotta lift 50lbs till you apply for that kitchen job where you're doing that dozens of times you'd want to be somewhat strong.
@@shaneshadowcat here’s a piece of mind. The girl my brother is dating said that it’s better than chefs (cooking). That they’re more accepting and supportive is how he said that she said. So hopefully that’s true!
Do an internship at a nice restaurant. You don't need to go to culinary school. Just learn on the job. :) Most of the best chefs I worked with did not go to culinary school.
Bakers and professional pastry chefs arent the same profession. A professional pastry chef does pastries, not baked desserts. Very different skill levels
When you are your own boss, you HIRE people to do the jobs you don't like/want to do. You also delegate and give responsibilities to staff members. When you have your own Bakery, you should not be working 16 hours when you successful.
