Much love from NE India. Here in Manipur, we call it yongchaak ( which literally translates into Monkey Rice). It's a highly savoured delicacy here, eaten in the form of salad(singju), potato and stink bean chutney (iromba), sometimes fried with fish head, gills, innards (maringkha) and a lot more dishes. It is so much in high demand that often they are imported from Burma at the border town of Moreh. Unlike other SE Asian nations where only the seeds are savoured, here in Manipur we scrap off the outer green skin with a special tool called Yongkhot (looks like a tongue cleaner) and savour the hypodermis along with the seeds. Consuming too many seeds often results in stomach aches, but every Manipuri will swear by this delectable fortune. Much love from Manipur 😊
In all fairness, I don't think it's the beans that cause stomach ache, but the chillies they're prepared with, because no one makes stink beans without chillies :) It has to be extra spicy
