    INGREDIENTS
    3 cloves of garlic, minced
    3 slices of ginger, peeled
    1T cooking oil
    3 - chicken thigh/breast pieces
    2 - 32 oz. boxes of chicken stock
    1tsp salt
    2 cups of water
    Green onion & cilantro, chopped
    DIRECTIONS
    Coat the bottom of a large stock pot with oil and bring to medium heat. Add garlic; lightly brown.
    Add chicken, combine with garlic; lightly brown (do not cook through).
    Add chicken stock, salt and ginger; bring to a boil until chicken is cooked through (about 20 min).
    Remove the chicken and place in a large bowl; set aside to cool.
    Add water to the broth and bring to a simmer.
    [in the meanwhile, prepare the green onions and cilantro]
    Once the chicken has cooled (about 15 min), remove the meat from the bones; shred with fingers or knife.
    Add the chicken back to the broth and let it come to a boil.
    Serve over rice noodles.
    Add green onion & cilantro and other accompaniments to taste.
    Notes
    Accompaniments: Chili pepper oil, bean sprouts, lime, fried garlic, sugar and fish sauce

    I made some of this tonight for my family and it was soup of the best soup I've made yet. My wife and daughter enjoyed it. Also made the noodles. Thanks you all the recipes.

    I had a Laos restaurant that introduced me to this and unfortunately they closed down 😞 so I wanted to try to make it myself, found your video and WOW! Thank you so much for this, I added quail eggs and some crunched up fried pork skin on top and it was sooo delicious, thank you!

    FYI I made some Khao Piak for my wife yesterday and it turned out great. Thanks for the video and tips.
    I switched around the recipe a little to make it more like her Moms. I used minced garlic and onions. It came out great. Thanks again!

    Great recipes. Idk why people would dislike this video? It's very simple. I add lemon grass to my broth. I'm a meat lover. So I add quail eggs, beef ball, roast pork, and shrimp. Lol

    I work at an authentic Lao restaurant but never got to the the chefs make the broth. Thanks for the video! I looooove Khao Piak. I'll even say it's better than pho :P

    Does anyone know what adjusting the ratios of tapioca flour to rice flour to glutinous flour do? Like what if you use less tapioca flour, what if you add a certain amount of glutinous rice flour etc?

      +albertschwytzle don't think so. i've always had vegetable oil/extra virgin olive oil in my pantry so one of those two oils were used.
