That list would be endless lol...like yourself I love sisig, and bakang sinigang (beef), but also chicken relleno (stuffed chicken), Laing (made of dried taro leaves cooked with pork belly, coconut milk, and chili peppers), dynamite lumpia (finger chili pepper with meat and cheese spring rolls), pancit palabok (noodles), pinakbet (vegetable stew made with long beans, eggplant, calabasa, okra and bittermelon cooked in shrimp paste)...these just to name a few... But that doesn’t even include all the desserts lol...have you tried halo-halo yet? A cooling concoction of crushed ice, evaporated milk with various ingredients including ube (purple yam), sweetened beans, coconut julienes, sago, gulaman, pinipig rice, boiled root crops in cubes, fruit slices, flan, and topped with a scoop of ice cream... But Omgosh my apologies I’m blathering again lol

Max, that Sisig and Rice…woo you can't beat that. I've been stationed in Pampanga before all I could say is they're the best cook in the Philippines. Tasted different provinces during my Tour of Duty that province is the best. Be safe always, always bring a filipino male guide to help you in your travel.
Wow, what a food adventure, one of my fave. 👍The duck adobo, goat caldereta and the tender goat sinigang, a sour soup which is also a cure for hangover are the dish that I missed so much, they bring back memories. The Pindang Damulag is not actually an everyday food not like pork and chicken but it also taste great like a beef. Thanks for sharing your food experience.

Sidenote: when they gave you a side of chili and calamansi, meaning you have to make a dipping sauce consist of Toyo(soy sauce), calamansi and chili or Patis(fish sauce), calamansi and chili, or Toyo, Suka(vinegar), calamansi and chili. It will enhance and balance our rich and savory dishes. Filipinos love thier dipping sauce. Just like when you had sisig.. The topping on ur dessert is like a coconut caramel shavings dont know the term in english but we called it LATIK. You can put it on all of ur sticky rice dessert.
yes, Latik. No english term that I know of, just know it is coconut milk cooked down. yes, thank you for the information. Sometimes I make the sauce like the locals do and sometimes I do not, not really sure why haha Also I have one more coming of KP cuisine!
Max, you have tasted all the Filipino delicious sosig, adobo duck, etc.; for sinigang, bangus (fish) should be the favourite choice. Nevertheless, you are amazing, love following your video. Keep it up!

You forgot to taste the atchara ( pickled papaya) that came with the carabao tocino to cut the sweetness of the meat . Also I'm glad you adapt the way we use fork and spoon while you're in the Philippines.
How could I have missed this? You DID have adobo already! Pork adobo is more popular though; with the meat tenderized (until the fat resembles a wiggly jiggly pudding) ever so slowly in a pot on firewood or quicker in a pressure cooker fired up by a blue flame on a gas burner. The shortcut doesn't really diminish the quality of the final product but the smokiness would naturally be missing. But, hey, not everyone likes smoky flavors. It appears your first mouthful of duck, correct me if I'm wrong, was a gizzard. That would explain the chewiness. It was probably too early to have beer with the sizzling sisig? The Kapampangans are known for their flair for cooking so you definitely were in the right place. Don't worry about mispronouncing the words; you muddled through and we love you for trying!

the toppings to that last one is coconut milk rendered down till the oil and milk separates then the milk form like that
