Can we use a food coloring with thr white candy melts for such small detail work as the eyes a small bow etc? is there a paticular type of coloring ie...gel vs. water/alcohol based or something else? Thank you for these tutorials chef, very infomative, your a great teacher!
Yes you can color white chocolate but you need to use oil based food coloring as water based gel colors will make the chocolate seize up. There are also really good fat soluble dry coloring on our website that would great in chocolate and candy coatings.

But after your videos I think I'll be able to have success. I have one question, how do you clean your paintbrushes after using with chocolate? Is there a good way to do it without damaging them? You are very good at explaining the details in making chocolate. I took a class online to make chocolate candy and the instructor left out a lot . I really struggle with making the candy especially the bon bons. I made some today and followed your direction by applying the thin coat and putting it in the refrig instead of the freezer and they came out perfect! Made my day. I enjoy your videos.

My fiancée's birthday is coming up in a few months and he loves construction and I wanted to make him a tool box/kit cake. Would you be able to do a tutorial on that? Question ... I use to make chocolate molds back in the day using Wilton brand ,,the chocolate tasted so bad , it burned the back of your throat ,,, Can I use Hersey Semi Sweet chips , heat them and will they set shiny and hard ...thanks
I agree that the Wilton chocolate coating chips do not have a great flavor. We use Mercken's or Guittard for best results. Hershey's chocolate chips are real chocolate and you would have to temper the chocolate prior to molding. Also remember that the chocolate chips are a dark or bitter chocolate and may not taste as good made into a larger candy.

i have always wanted to paint with chocolate, thank you so much for this video!!! my only question is, how do you clean the brushes? meaning, do you use soap and hot water, can i put them in the dishwasher or no soap? also, can you drizzle the chocolate into the little egg molds like you paint it in for a smooth effect instead of drizzling it on top after it's cooled? would you cool like painting?

You can color Mercken's Super white candy wafers or the regular Merchen's white wafers . I used the pre-colored Mercken's coating wafers for the video. If you do decide to color your own candy, be sure to use candy colors that do not contain any water. They must be oil based liquid colors for best results.

+ReHomem I use very hot water and a mild soap. Rinse thoroughly and dry before storing.

You can wrap them in a light weight cellophane wrapping or cellophane bag. They won't melt unless they are stored in a hot area.
