Pot Roast | Cooking with Holly

- Pot roast is a fall staple in the Furtick household. It’s hearty and goes a long way, even with teenage boys who eat ridiculous amounts of food. And bonus: there’s little to no prep time needed because the crock pot does all the work!

Ingredients:
Two 2 lb Chuck Roasts
8 oz Baby Carrots (about ½ a small bag)
2 Sweet Potatoes, peeled & cut into 2-inch cubes (you can also use white potatoes)
1 Carton (32 oz) Beef Broth (or frozen leftover broth from a previous roast)
1-2 tbsp Canola Oil or Ghee
Directions:
1. Heat 1-2 tbsp oil or ghee in a large skillet. (I don’t recommend olive oil or butter)
2. Sear both sides of the roast (3-5 min on each side). Lightly salt the top side before flipping.
3. Repeat for the 2nd roast.
4. Place both roasts in the crock pot.
5. Pour broth over roast.
6. Salt carrots and potatoes generously. Then add to crock pot. If you like your veggies more crunchy, add them in a few hours into cooking.
7. Cook all day (about 6-8 hours) on high.
8. Very Important: Pour all leftover broth into a freezer container and freeze for the next time you make this dish.

I used to be a full time stay at home mom. All three of my kids are in school so that gave me the opportunity to go to work. Now I'm using instapot to cook instead of a crockpot. I highly recommend it to busy folks without much cooking time on their hands. ❤️

Great job! I do mine identical to you Holly and Abby. Sometimes I switch it up and add an envelope or ranch dressing, lipton onion soup mix, stick of butter and Peperoncino. Enjoy!

I was so excited the see another Holly video. I use either chuck or top round. Bottom round does not make good pot roast. I make it twice a month in the cold months. I use the Instapot rather than the crock pot. I don't like the idea of a crockpot on while I'm at work. The Instapot cooks a roast in 90 minutes. I throw the meat in and add a cup of water. Usually a tablespoon of Better than Bouillon. I don't sear the meat. I am a minimalist in the kitchen. I roast my baby carrots separately with olive oil because they would get mushy in the Instapot. I make gravy with the juice or sometimes soup. My husband is OK with instant mashed potatoes. Salt and pepper to taste. I also like garlic in my potatoes. The recipe can be tweaked for your family and you will never throw any out.

Very yummy. But o always add paprika, garlic clove, and cut up onions in with my roast while it cooks. Those three things will add a whole level of flavor to the roast!
