If the SPC flooring is laid over existing tiles, doors can be cut but how will the height differential with bathroom flooring be catered? The bathroom floor would be a few mm lower and we will keep tripping.

Yes SPC is an option but Wood floor is a better option for your problem.

You have to put a R profile to cover and finish the difference. But yes there will be difference and that will be obvious.

8mm can be in sports vinyl only. Why do you need this thickness.
