I thought I would share one of my favourite “one pot” meals with you. Hope you might try it out. It is delicious. You can always cut the recipe in half. TUSCAN TORTELLINI SOUP Serves 8 Prep time: 15 mins Cook time: 15 mins Total time: 30 mins Creamy Tuscan Garlic Tortellini Soup is so easy to make and one of the best soups that you will make! Tortellini, diced tomatoes, spinach and white beans are hidden is the most creamy and delicious soup that you will love! Ingredients * 2 Tablespoons butter * 1 small white onion, diced * 3 cloves garlic, minced * 4 cups chicken broth * 28 ounce can diced tomatoes * 1 15 ounce can white beans, drained and rinsed * 1 cup heavy cream OR half and half creamer. * ¼ cup grated parmesan cheese * 1 Tablespoon italian seasoning * 1 teaspoon salt * ¼ teaspoon pepper * 2 cups cooked and shredded chicken (I usually use rotisserie chicken) * 9 ounce refrigerated tortellini * 2 cups spinach, torn Instructions 1. I know some people are hating on the Kei Mini Truck but I f***ing loved the build videos for it! I can’t wait to see the interior build video! I don’t really care if it’s practical or not or whatever. I figure maybe it’s underpowered but maybe that’ll lead to a video where you have an issue and you share that experience. Or maybe it leads to a video with you upgrading the engine somehow. (I know it’s possible but I am just not car-savvy enough to know what you would do besides getting a bigger engine somehow.) Also, I’m curious to see what you do with the front of the car interior too because you can’t be driving on those crummy cushions for long! Thanks for the content Ryan!

Nice to see we got you on the BTB ;) Really with the chicken going into something that is going to simmer on the stove to cook, you really didn't need to worry much about it being frozen. You could have even started it with it frozen all the way, added all your ingredients, and shredded it at the end. So happy to see you on the road again...those are the videos I like most.

It is interesting you carry fire wood with you. So do I, and it is only because should I have a flat tire, you need to have something to keep your vehicle from rolling back/forward and if you don't, having a couple pieces of firewood handy, that would solve that problem! I am hoping to take a vacation soon and though I won't sleep in my car, I will enjoy all the other benefits, take care my friend and stay safe!

The biggest drawback of most mini trucks going up a mountain is not the lack of horsepower, its because most of them have carburetors that cannot compensate for the thin air and they run too rich. If your Kei has fuel injection it wont be as big a problem.

Love ALL of the content bro. Been here since before the doctor Phil episode lol. Imo just keep doing you. Mini truck is a concept I’m curious about. Just wonder if it can take ya where you want. Either way, I’m here for it! Friendly suggestion though, they sell propane gauges at Home Depot for like 15$ that screw right into your cylinder and you don’t need any extra parts. Super easy and that way you can plan accordingly with your propane usage. I bought mine for my grill and freaking love it. Saves me as I’m someone who likes to stretch that shit out as long as I can!

I just find it so cool that with starlink / solar you can be in some crazy remote area in say Alaska next to a river that you're fishing from, turn around if you catch something for a cook if not you already have a fridge full of fish, cook that up, crack open a beer and start playing call of duty talking with your friends or streaming netflix. I know for content you kind of have to keep moving on site to site, but if I am able to work remotely and have more than enough supplies to survive a few days chilling right there then I probably would lol I know you have done over nights or back to back nights at locations before but usually you keep it moving. But I could see myself hanging out there until my supplies run low enough that I need to head into town and before that happens probably planning the next location to stop at. Really living the dream even though I'm sure there are times it feels like work (especially driving and then parking behind a cracker barrel for the night lol) but if you are able to profit off of this and learn multiple skills (how to build out vans, build a brand, editing, etc) you sort of hit the jackpot.

Glad you're back on the road now as a seasoned camper cuz we've had four or five and we own one now ours has a full bathroom but we've had to use those little porta potties use the chemical that we use in the campers just a little bit of that potty chemical and it won't stink in an emergency when you get into that little truck I see it's raining in this episode you won't be able to just walk up to the front driver's seat you're going to have to get out and walk all the way around to the cab that's going to be inconvenienced isn't it or a wet one be safe have fun we enjoy your adventures
Dude, I just made this dish for my family of six and it was a HIT! Only thing I did differently was add cheese to the top and once it melts, dish it up with a dab of sour cream and some tortilla chips. It was 🔥

Pro tip: Don't season from the jar over a hot pan. The moisture will cause your seasoning to form chunks. So glad to see you back on the road!
