I wouldn't recommend using a regular straight stitch. Maybe a zig zag, 3 step sign zag, a stretch straight stitch or even using a double needle for a more professional look
You can but since you’re already stretching the fabric it’s not necessary. My daughter who is really hard on clothes wears these to bed each night and hasn’t popped the seam.
They are opposite- typically you cut on fabric that is folded in half like it is on the bolt. So if the print was facing up at you the underside (the side touching the table) would be print also - the wrong sides of the fabric (the side not printed) would be touching.
I see the size for the length of the elastic, but I cannot find anywhere on your website a size chart for the actual clothing items. Can you direct me, please?

Also when using knit fabric it's much easier if you have a walking foot.
I would disagree with that. It depends on the knit and project. For lighter knit it’s not necessary.

It needs to be a jersey knit - not woven or it won't have enough stretch to work.
