Hi Rose, yes ! use a double boiler - I use this technique in many of my chocolate videos. A double boiler is very safe for the chocolate, as it melts is very slowly, and also the cream too. Thanks so much for watching ! 😊

That looks amazing. I usually save my chocolate chips for when I make my gluten free and dairy free chocolate chip cookies. I have dairy free chocolate chips that I keep in my fridge in my basement prep kitchen. But sometimes it’s good to melt them and turn them into a chocolate icing or do what you just did with heavy cream and chocolate chips. A couple of questions: 1. Is there such a thing as “dairy free” whipping cream? If so…where would it be sold in my area (I live in Lasalle)? 2. Would it be possible for me to make a ganache like what you just did in the video with dairy free chocolate chips? I just want to know if dairy free chocolate chips would melt as easily or if it would be harder to melt dairy free chocolate chips than regular chocolate chips? Or easier? Thank you for doing this video. Very helpful to me and others
Hi Kent, yes, dairy free whipping cream does exist. I've seen it somewhere a few years ago, I purchased some and used it for a friend, and it whips exactly like real 35% whipping cream. If your dairy free chocolate melts easily, then yes, it is 100% possible to do what you want. I see zero problem doing that. I'd give it a try ! I'm sure you will be very happy with the final result !

My dairy free chocolate will melt just as easily. Can I ask what stores you saw dairy free whipping cream at? Ideally I like to save my chocolate chips for my gluten/free-dairy free chocolate chip cookies however if there’s ever a time where I have a tiny bit of chocolate chips I will try making something like that with milk. Would it work with milk?
Hi Chris ! The best way is to just put your bowl over a pot of hot water, ( not boiling ) this will gently melt the glaze. You can also use your microwave, if you do, use the "defrost" mode or the lowest power mode so you do not burn the chocolate. I hope this helps and thanks so much for watching !

If I wanted to use it as a sauce after it’s been in the fridge, what’s the best method to ‘loosen’ it up again?
