Soft and velvety orange loaf

Glazed Orange Loaf Cake - the fluffiest, buttery orange loaf with a sweet, shiny glaze is quick to make and absolutely delicious, just perfect if you want something sweet this week.
Ingredients:
150 g caster sugar
Zest from 1 orange
220g unsalted butter, room temperature
3 eggs, room temperature
1 tsp vanilla extract
juice from 1 orange, about 80-100g.
50 g vegetable oil
240 g all-purpose flour
1 ½ teaspoon baking powder
1 teaspoon salt.
Glaze:
1 tbsp greek yoghurt
1 tbsp orange juice
1 cup icing sugar, sifted.
1. Massage or mix the sugar with zest until the flavours are released. It will take just a couple of minutes.
2. Add the butter and mix everything for 3-4 minutes, then add the eggs, one at the time, mixing between each one.
3. Alternate the dry ingredients with the vanilla, orange juice and oil in 3 additions, mixing until just combined.
4. Transfer the batter to a loaf pan and bake it at 165C for about 1 hour.
5. To make the glaze, just mix all ingredients until smooth, then pour it over the cooled cake. Slice and enjoy!
