    Thank you for this video! I am trying my polenta in the IP right now. I used the Porrige bottom, 7 minutes at low pressure, will come back to tell you the result...
    So, after the 7 minutes were finished, I let it stay without depressuring, like you said, and after 30 minutes the pressure was all gone. I waited almost another 30 minutes before opening the lid (so total of 1 hour after the cooking was over), and it was PERFECT!
    PERFECT POLENTA with almost no effort at all! THANK YOU so much! This will be a staple in my home from now on. Much love from Italy. 😘

    OMG !!! I just found your video last night. I have an IP-Duo (which doesn't have a "manual" button). I was just praying that I will be able to make polenta without the "burn" sign. So I followed everything you did and I set my IP to " Porridge" for 7 minutes. I slow released it and Im in polenta haven !!!! I added a teaspoon of vegan margarin to my plate which made it extra Smoot and creamy! Thank you so much for posting this video !!!!!!

      Hi and thanks so much for writing. I've seen a number of people talk about the "burn" sign. Of all the things I have cooked in my IP -- and I've cooked a lot of sticky things, thick things, stuff without a whole lot of broth, etc., I've never seen the burn sign. Interesting. Anyway -- I'm so happy you like the recipe. It is a total game when making polenta. My risotto is the same way...killer recipe and foolproof as well.

      @@Jill4Today You won't believe that I loved my polenta so much I had to make it again ! This time all I did differently : I doubled the ingredients. Sadly I got the "burned" sign :(. No clue what happened. I opened my IP, mixed it well (I could feel the bottom being "different" but after a good mix I closed the lid and back to pressure , sure thing the burned sign came back again :(. I will surly give it another try in the next few days but this is a very strange mystery . I thank you for your video, regardless !

      I'm sorry to hear the problems you are having. Are sure you are set at "normal" heat and not "more"? I suppose different instant pots can run hotter, etc. Let me know how it goes

    Jill, I’ve never had polenta until this morning. I grew up in the south and have eaten grits all my life. I’ve understood that grits and polenta are similar. I just used what I had, half water and half milk, a tad salt and a handful of shredded cheddar cheese. What I ended up with was the creamiest, smoothest, tastiest bowl I ever had. I’ll definitely try your recipe next 🙂

      How wonderful you'll be giving polenta a try. Yes, I believe it's very similar in consistency. We don't get white polenta here. I'm not sure if it's made. The way you made your grits sounds amazing! I've made polenta with cheese and a bit of cream and it works delicious wonders! So happy you came and watched the video.

      It is wonderful because I used to stir and stir at the stove. I've used this recipe a number of times and it always comes out perfect.

    UNFORTUNATELY THE POINT OF USING A INSTANT POT IS FOR FASTER COOKING BUT TO WAIT 1HR SEEMS TO DEFEAT THE PURPOSE OF THE INSTANT POT. BUT THANK YOU FOR THE VIDEO, I'M SURE IT'S HELPFUL FOR SOMEONE WHO HAS TIME TO DEPRESSURIZE FOR AN HOUR. :)

      Actually what I said was I let it sit for an hour after it finished cooking because I had other things to do. The depressurizing took only about 15 minutes, plus the 7 minutes for cooking. i am hoping that will clarity the "one hour" comment I made.
      That's the best part of an IP -- you can cook as you like. Release the pot in a jiffy or let it sit for as long as you need. The IP will actually sit for 10 hours on warm. I hope this helps.

      You'd be surprised at how many viewers have either not heard of polenta or never had it......it's an Italian coarse (corn) meal - if you know what grits are, you'd know what polenta is.

    Polenta=Corn meal mush, for us hillbillies! Seriously...the Instant Pot cooking method is nearly the same as Risotto and the result is fabulous...and don't forget to Stir after opening the lid! Thumbs Up, you..

      Huh. I knew my grandfather would never eat corn meal ANYTHING due to eating it so much during the Depression. He said they’d have corn meal mush for breakfast and corn meal patties for lunch and dinner.
      And I never thought to ask him what that meant.
      I’ve loved soft polenta and polenta fries for years, and it never occurred to me that it was the same thing he talked about!

    Is the natural release sufficient, or does the additional "let it sit for an hour" improve the end product?

      It was just that I let it sit for that long. Natural release is plenty enough time

      It's great used as a side dish, instead of rice, potatoes, etc. Or you can serve it with spaghetti sauce and cheese for a main dish. You can also spread it in a pan while it's still hot. Chill it, cut it up in squares and fry it in a little bit of olive oil

      it is 4 cups broth or water to 1 cup polenta.

    I bought a package of polenta once from the store, had no idea what to do with it so i tried to just slice it and fry it, it was sooo gross..never tried it since..lol

    We followed the steps to the letter - It did not work at all for us... The Polenta got completely burned :(

      Oh no!! I am so sorry to hear this report on the recipe. I'm wondering if the heat thermostat on you IP is running hotter than mine. I've had many reviews on this recipe and no one has written in about a burning problem. I'm very sorry

      @@Jill4Today I'm sure your recipe is fine, most ppl seem to be successful with it. Maybe it's my instant pot... I've tried polenta many times by now, many different methods, twice today alone. I think I should just move on and admit defeat.

      @geesys bradbury polenta is a bit of a tricky item. What I like about the IP version is that I don't have polenta popping and burning my hands. Another thought would be for you to try it again but instead of the normal "high" setting that IPs default to, try adjusting the setting to low or medium. That could take care of the problem.
