INGREDIENTS
45ml Dark Rum (1.5 oz)
30ml Velvet Falernum (1 oz)
22.5ml Fresh Lime Juice (0.75 oz)
METHOD
1. Combine all the ingredients into your cocktail shaker
2. Shake with ice
3. Strain into a chilled coupe
4. Garnish with a lime wedge

Very interesting drink. In a lot of ways, the flavor from the dark rum, with the spice and zest of the falernum and lime, remind me a lot of a Cuba Libre (but more rich)!
Steve rushing to make the second cocktail and all I was thinking "is he gonna give us a smile during the shake?" and I was not disappointed!

I've got some Kaniche Rum (a Pierre Ferrand brand and really wonderful) from Barbados. Looking forward to trying this one out. I would note that the Velvet Falernum has the advantage of being stable for longer storage.

Hi Steve! This looks awesome, I'm looking forward to making it! Just a couple of questions - 1. Do you have to use black rum like the Meyer's or would this cocktail work with a dark rum like the Plantation Dark or Appleton Estate 12 Year? 2. What size are your glasses? Your cocktails seem to fit perfectly but I always find the coupe glasses I can find are a bit too big.

Yeah, even though JDT Velvet Falernum is the most commonly used Falernum, it is by no means the best.

I sometimes think to myself with the amount of lime juice you put in these drinks wouldn't they be quite sour? I've made a few drinks over some months that were like this and had about the same amount of lime juice in them and I find that it takes away most of the flavor and all I can taste is lime and sour nothing sweet about it.
He considers himself as a sour drinks fan, if he finds a cocktail to be too sour, It's really too sour
The most important thing on a long sea voyage with limited supplies is to prevent the scurvy. Lime does that for you! ;-)
There are different varietals of limes which can vary in acidity and sugars. If they are picked at different times, they can be more or less acidic. Just need to adjust recipes according to your produce..
I do like sour drinks... but I like balanced drinks. I wouldn’t describe this one as sour.
Do you count when your shaking? Maybe a nursery rhyme? !!!

Hmmm.... Falernum in any form seems to be unobtainium here in my part of Canada. And some of those ingredients to diy... not sure if they exist here either.

Hey Steve, is 'The Commissary' paying for this years holiday? You seem to do a few videos where you compare there bottles as an alternative and never a bad word said about them. cant understand why you need to fix something thats not broken unless it has commercial value.

Because there is.. it’s at my warehouse and there are 4 other warehouses.. there’s about 5 trucks that come in each day and reverse into the other warehouses..
