Would be ever so happy if you would also teach vegetarian versions of popular Southeast Asian dishes like laksa, mee rebus, soto, mee siam, satay, Indian rojak (for a start😜).
I've always thought Tom Kha was tastier than Tom Yum. I'll have to try the recipe next time I get to the Asian market since some of the ingredients aren't common where I live.

Don't you remove the lemon grass and galangal before serving?
They are tough and not to be eaten. You can remove them, but the locals will leave them in the bowl.
