You should try making the cheese sauce separately with double cream or evaporated milk and different cheeses, some onion powder and cayenne pepper also pimento peppers add a lot of flavor. I also start off by making a roux using equal parts of butter and flour and then adding the milk and the cheeses and the seasonings follow

My favorite cheese is Extra Strong Cheddar [the one that makes you perspire when you eat it] ... but my favorite Macaroni pie has 3 different cheeses in it ... Cheddar / Red Leicester and Parmesan [as well as roasted garlic]... it is particularly delicious with sausages and a generous splodge of a tasty tomato ketchup ..... It's even nice between two slices of bread. Red Leicester is an orange colour Cheese and when its grated and cooked in a macaroni pie it resembles the carrot you put in this recipe. Thanks Renee.

Your mom traditions are also my traditions I leave out eggs because I'm not an egg person. I add carrots and sometimes celery, I also add some carrots and breadcrumbs to the final cheese layer. I love to eat it with lentils and potato salad.

Not all of Americans from the south bake until its dried out. At home we make it moist and don't over cook the noodles . We do the topping with pepper, paprika and butter at the end then bake .

Hi Renee, well its not Sunday, but I was craving macaroni pie so I tried your recipe with the carrots (I also added chopped onions and red peppers). If it were Sunday lunch I'd have it with stewed chicken and red beans or pigeon peas and slices of tomato and avocado. Yummy!

Best macaroni pie was first a mistake- my husband mistook a hot pepper for pimento pepper and added it to his pie...my word! It was the best mistake ever! Try it!
You are doing fantastic how about sometato catchup or some slice potatoesalittle bit paprika or some slice onion or grate onions oh some boil carrot cut in cubes instead of grate carrot what ever your choice but looking good and taste enjoy.
Please don't add mustard I think it changes the taste completely and it taste sort of off to me,I can instantly tell if someone uses mustard in their pie even just a little..

I grate an onion into my pie for flavor and I add fresh seasoning...

Making a roux is not the way to make traditional Trinidadian macoroni pie.
Try adding some mustard to your macaroni pie. It brings out the deep cheese flavor more

Sometimes I even just beat the eggs with the milk. Really depends on the day and how I want it glad we share some similarities :)

Always break your eggs in a seperate bowl frist
I use grated garlic and onion, mayo and mustard in mine very tasty. The carrot is not a favorite of mine in MP nevr used it.
I eat my pie, with any and everything.. I just love tuh eat!

I don't use eggs so I add milk and corn/potato starch, I also add mustard and pimentos.
