The lime juice mixed with milk makes butter milk creating nice soft spongy cake. Also could use vinegar and milk. Great for cornbread softness as well.

I was taught that Sponge has very little or no butter n no raising agents. The rise n softness comes from the eggs. Once you have butter it's a butter or vanilla or Pound cake which include rising agents eg baking powder ...
I tried it...don't know what I did wrong the top of my cake came out hard like bread and crunchy but the inside and bottom was soft...will attempt again though..
This came out really good. I tried it, light and tasty, used 1 cup of white granulated sugar instead of 2, was even better 😊

Try using swerve sweetener instead...u might have to use a little more and its a bit expensive but its perfect for baked goods

Sounds like a problem with your heat/oven. Maybe too hot?
