Ingredients:
For the caramelized bananas:
1 tbsp unsalted butter
3 tbsp brown sugar
2 bananas, ripe, cut lengthways
For the cake:
100 g (3/4 cup + 1 tbsp) flour
1 tsp baking powder
pinch of salt
40 ml (1/3 cup) oil
70g (1/3 cup) sugar
1 tsp vanilla extract
1 egg
100 ml (1/2 cup) buttermilk (kefir or yoghurt)
Preheat the oven to 180°C / 356°F
Bake for 35 to 40 minutes
Skillet/baking dish 20 cm/8 inches

Sis and I moved into a 55 and older community from a neighborhood with lots of kids and a grade school just down the street. I cannot convey in words how much we both miss the sounds of children playing outside. And the frog concerts! So loud you couldn't think! I miss our squirrels but my sister doesn't. Now we get an occasional coyote howl-fest but you have to be out in the middle of the night to hear them. More than a couple. I think a dozen would be a conservative guess. I mentioned it to neighbors and now they all want to hear them! I was out with my own furry beast at about 4:30 AM when I was blessed by nature. Brand new development, brand new house, greeted by a teeny tiny snake by the front door before moving in. Silly thing was trying to strike me! Had it been grown I think sis would have moved out before moving in. Houses built for old folks but kitchen cabinets hung so high the women can't reach the shelves! Same with closet rods. We passed around our wonderful and creative handyman's number and he's been VERY busy lowering shelves and etc for most of this end of the street. They see our railing by the front door and they all want railings and extra grab bars put in. Handyman is head of indoor and outdoor maintenance of the big (exceptional) retirement/assisted living business in town. He knows EXACTLY what we need to be safe in our homes.

Wonderful recipes! I will try the first and the third - I know banana pancakes well, and if anyone finds this recipe makes them too eggy, they can try one large egg to one large banana and blend them till smooth in a blender - that ratio, in my experience, yields a very smooth and light pancake that isn't overly eggy. A tip for any time you're going to be blending banana, helps it blend more quickly, smoothly & not stay in chunks, is to press on the skin all over the banana BEFORE un - pealing.

Yummy omelette
I tried this recipe today with the eggs and potato chips. First I sautéed some broccoli and diced up carrots in butter and olive oil in a separate pan and then I took a couple croissant and I very very thinly sliced them and put them in the bottom of my buttered and oiled cast iron pan, then I beat my eggs and added sweet potato chips and regular chips mixed and added the broccoli/carrots stir fry and folded that into the eggs in the bowl with all the seasonings and stuff. Poured over the thinly sliced croissant pieces. Baked It and it was delicious! I wouldn’t tell anybody what was in it before they ate it. But they all thought it came out beautifully from the oven and wanted to know what it was. I just said, “it’s an egg bake recipe from you tube and I’m not gonna tell you what’s in it until you finish eating, now taste it.”Everybody loved it! We served it with salsa and sour cream for those that need a little topping. Even my dog loved it! Thank you for this recipe. I’m going to make the egg banana pancakes and the banana egg cake this weekend.
