Hi Lindy: Thanks for another cooking video. As far as what you have shown on your videos, you eat pretty healthy and economically. I think happiness is important too and a bit of not so healthy now and again helps that.
For YEARS, I have been of the mind that Pop can eat what the heck he wants...cuz he is healthy. Decades, actually, now that I think of it. Even before Mom passed, and especially since he was still working in his 80s*, I had him keep his 'stash' of goodies on the back porch (so Mom, always sickly and diabetic, wasn't tempted by the sweets especially). Now, at 99yo, I make sure to buy what he WILL EAT...versus what is 'healthy'... He gets some meals delivered from the local senior center, drinks a chocolate Boost each day, and then I keep him supplied with his other goodies: the weekly plain McDouble from McDonalds, oatmeal cookies, DrPepper, Oscar Mayer turkey, CHOCOLATE in various forms (like M&Ms, he can just grab 6-8 at a time and be very happy), and so on. He doesn't really want to eat anymore, only wants to drink, so I just make sure he always has foods he actually enjoys nibbling on. He deserves to eat what he wants. (*he was laid off, with dozens of other workers, at 85yo!)
I really think you are doing the best anyone can do. Enjoy your meal ❤❤. Sausage is not a bad choice. I’m a big ‘fan of Atkins diet and to be honest I ‘ve never felt happier and more energised and satiated than on a ‘wholesome’ diet. I truly believe that it is more important to do and eat what makes you happy, instead of following rules that someone made up ( and may work for them ) I do believe that we all need to take back responsibility for our lives and have the courage to bear the consequences, good or bad. Life, after all, is an awesome adventure🤗 all the best ❤❤
Hi Lindy. Northing wrong with that meal. I do sausage, potatoes, onions, and green beans sometimes. It's so good and easy. Sometimes, I use canned round potatoes, and I use canned green beans. So good. I like frozen stir fry veggies from walmart and add chicken or shrimp over white rice. Of course, I put soy sauce, hoisin sauce, fish sauce & honey this time. Easy & delicious.
Oh Lindy! lol I am such a gadget freak!!! I use sea salt... good for me! I'm on my way from South Florida... be in Panhandle of FL tomorrow? Won't make it out by Christmas... but the desert will wait. :D I might treat myself to a hotel one night maybe sorta might.. but I"d worry about my van while in a room!!! Silly me. God is good.
Gotta' Love those carrots huh ? I'm largely fulltime SOS free plant based, but I prepair all my food myself🌞. We all love great food in #vanlife. 👍 Rock on 🙂.
It's all good for you except for sausage fat. You could counter act that fat with a teaspoon or so of EVOO. The EVOO would help to crisp everything up too. The potatoes are high in potassium and other minerals. Onions are good for heart health along with a long list of other things. I like to add onion n green pepper to my hashbrowns with chopped up bacon and cheddar fried in EVOO for breakfast. EVOO = extra virgin olive oil
You are so enjoyable to listen to - you are honest and authentic. I rarely use salt in cooking or afterwards. Years ago when my husband had his Gerd's we had to cut salt and spices 😞from out diet - hard when you like Taco Bell! I watch Van Life with Gina - she doesn't use salt but various Mrs Dash seasonings. So I bought some and am experimenting with them. She makes a lot of one pan meals which I do a lot of now that I am a widow. Been in interesting time with flavors. If I want salt I buy some chips!!
Your food looks great. It’s funny how after awhile just something like this works great I get so tired of eating out but probably go just t get out of house even if not hungry r enjoy the food place. I’m going try t make this one. I have tried air fryer thing you might like one. Oh gravy my grandmother ust to make chip beef gravy I could live on but can’t make it.

I was really wondering how you deal with internet access. Is there something special that you use like a star link? I'm kind of thinking that you don't have a Starling, but how do you upload your videos and also have data left for watching things on your phone? Cause I know. I quickly ran out of data to watch and upload things when I moved until. I got my internet up and running again.😊
Eat whatever in moderation. Marley should not have processed meats. It is hard on their liver. Your meal looked great. I'm not a cook either. My ex husband was the cook.

I had told her once I get my own place you are welcome to bring your yourself & camper to my back yard. It's legal where I live. I just baked spring rolls from Dollar general with six shrimp each for hubby and I. Those spring rolls were so delicious.
