- Making Pumpkin Seed Butter and Pumpkin Seed Praline Paste from start to finish. This is epic on some toasted english muffins. Don't stop there, you can put in on pancakes, waffles, in your sweet porridge, shakes and even pair it with some vanilla ice-cream, treat it like Peanut Butter. I'll leave the combinations to you. This is full of flavour with a backbone of richness. I will never underestimate the intense flavour of Pumpkin Seeds. You will need patience when making this but the payoff is worth the wait. 1kg Roasted Pumpkin Seeds
A good seasoning of Sea Salt

100g Pumpkin Seed Butter
250g Unsalted Butter

Finally made this recipe yesterday - I was able to procure a wet grinder - the beginning was a bit rough at first as I did not know what to expect, but with Avery's guidance, the end results were wonderful. Smooth (very, very), creamy, earthy, nutty with a bit of sweet and saltiness. 😋
Thanks again, Avery for your guidance with the wet grinder - I am more comfortable in using is for nut butters. In fact, I do have a bag of pine nuts, so perhaps I will repeat that project. 👍 Photos have been posted on IG and FB.

Yay - a new recipe! I have raw pumpkin seeds!!! I will plan for a "Pumpkin Seed Butter" project day - while I don't have a wet grinder, I was able to achieve pretty good results using my mortar and pestle and immersion blender with your Pine Nut Butter / Praline Paste recipe (using smaller amounts, of course).
I look forward to hearing how you thought of the flavour.

Can one use a food processor instead of an electric stone grinder and get the same results?
Yes you can, but it won't be as smooth or creamy as with a wet stone grinder.
Is it possible to just use a food processor?
You can but you won't get it as creamy or super super smooth. After all, a food processor cuts but this crushes.
Avery, is there a reason you used a wet caramel vs a dry caramel for this recipe vs the Pine Nut recipe? I am roasting 500g Pumpkin seeds today, maybe I can make the caramel later today. To confirm, is it 750g Pumpkin Seed Butter / 400 grams sugar plus enough "wetting water" for the Pumpkin Seed Praline Paste? I am planning on making a half batch of each ("butter" and "praline paste") to share at the office. What type of bread item do you recommend I bake to accompany the Pumpkin Seed Butter "Butter" ? perhaps one of Charlie's recipes? 😉
I used a wet caramel this time round because I was a bit cautious with the fact that maybe the pumpkin seeds are drier than pine nuts (oil wise coming from the pine nuts). I was only going by pine nuts being fattier hence the dry caramel for them and the wet for the pumpkin seeds. I might do a wet caramel for a sunflower seed praline as wet. Yes, that is correct. It would be 750g Pumpkin Seed Butter and 400g of sugar. You of can course, adjust the sweetness to your preference. I think any of his recent rye collection will go nicely and very earthy/ rich flavours coming out. You can also make anything of his with chocolate because funny enough it is rather similar to peanut butter and for me, chocolate and peanut butter are good friends. I hope this helps and I look forward to hearing what you think of the flavour.
