This Madras is the best we have ever tasted. The red onions add a sweetness that compliments the dish. Looking forward to more and love that you cook from scratch rather than using base gravy.
What I really like about chef Ajay, beside his yummy delicious dishes, he reply to his audience. I am an English speaking so I understands him well especially when he gives extra tips.when you part knowledge, it comes to you in many different ways 👍 There are some chefs who will not answer your question pertaining to the dish, but if someone wrote and say ‘I made your dish,’ his answer will like thank you for trying.
Hi Ajay going to try this tonight coz I love Madras. In the video it says to add 1 Tbl spoon of chilli powder but in your description of ingredients it says 1 Tsp ? Which one is correct please? Thanks
Apologies for replying late. You could use chilli powder as per your likness and degree of heat of it. I personally like mild chilli powder and would use 2 tsp of it.
Hi Liam Thank you for compliments mate. It depends how much sauce you want in your dish. Double everything else except chilli powder and corriander powder. Hope you enjoy your cook off.

It is not a curry powder that is called madras. I will post a lamb madras recipes in next month with madras masala mix ingredients.

Made this again today. I marinated the Chicken in garlic for a about 40 minutes before. AMAZING how brilliant this recipe is. ❤️
