Even if that was true Ken is definitely stronger and more durable to beat Star Platinum.
Besides which, upon reading Kenshiro's bio in the Fist Of The North Star Wikia, his arm strength is immeasurable and his punching power allows him to smash through 5m thickness of rock with one punch.
Not only that, Kenshiro can strain his muscles to repel bullets from small calibre guns.
Jotaro doesn't, from what I read on him besides his stand, have any real powers or abilities anywhere like that of Kenshiro's.

Normally I'd agree with the whole "You can't see his stand" thing, but considering this is Kenshiro we're talking about, a guy so in-tune with the physical and spiritual flows of energy, I actually wouldn't be surprised if he could sense it, if not see it.

Star Platinum, with its literally heartstopping, bullet-catching precision, was able to correct Jotaro's pressure points before the damage reached explosive levels.

Morecrafty That is interesting then. I'll admit to a lack of knowledge about Kenshiro, personally, but whether that power applies to Stands or not is a very subjective discussion I suppose.
One could argue that Stands are not living beings, but manifestations of one's willpower, much like Green Lantern's powers. And that'd be right. However, use of a stand could easily shift ones' aura to form said stand.
I suppose the most simple answer to this question is to think like a Mangaka putting these universes together. In which case, we ask not what is necessarily the more realistic answer, but what is the more interesting one. And Kenshiro seeing stands so he can "stand" a chance certainly has more narrative potential than otherwise.

Hamon really isn't effective on humans, it's more effective on supernatural beings, while hokuto no shin ken is very effective on humans to the point of 1 hitting them so it's a pretty bad matchup

Not sure how to feel about this ( 2 of my favorite characters going at it.) Jotaro didn't do any time stops, Kenshiro not using his "stand" or the improved musou tensei from Hokuto No Ken 2. Honestly, the fight should be a draw with Jotaro stopping time and Kenshiro having timer based killing techniques that can kill in 5 seconds; it really depends on who can take the most damage. Not to mention the amount of power their fists possess would result in a bloody fist fight such as Kenshiro Vs Raoh or Jotaro Vs Dio. But I really liked the manliness of this fight. Because Jotaro's Star Platinum can react to and catch a speeding bullet that was fired mere inches from Jotaro's own face. The only reason Jotaro had trouble with Dio's knives is because Dio had stopped time on him, at a time before Jotaro could fully use his own time stop. And at that, he could just use his time stop and pummel down Ken before he gets a chacne to attack, so it really is just about who attacks first

Why Kenshiro beats Jotaro:
1. The "Only stands can beat stands" thing is a hyperbole stated up by the characters as no other entity in Jojo have the same abilities as stands early in the series. Stands are described to be psychic or spiritual energy, and have shown to be touched or seen by those demon hands in part 4 or the entities in the Rohan novel. Kenshiro literally uses "aura" or fighting spiritual energy which is exactly like stands are given that Jojo is based on Fist of the Northstar.
2. Kenshiro has Musou Tensei which is a God level beyond stands like Wonder of U, GER and even Over Heaven... being able to erase your own existence along with the existence of anyone you want to erase. After all nothingness cannot be affected by time nor space. If Kenshiro uses it he wins no matter what, let alone the secret technique that allows him to summon gods.
3. Kenshiro has Soryu Tenha (Fist of the Blue Style) which negates any Supernatural abilities as it’s stated to prevent spiritual or psychic attacks in the Manga. That, and combined with Kenshiro's power, speed, durability, skill, combat experience, and range, any argument for Jojo stands wouldn't matter.

Son Goku Dio killed Jotaro's great, great, great, grandfather's body and took over his body. Their Stand's abilities are almost the same because DIO's stand power comes from the body he took over.

Technically Ken wouldn't be able to see Star platinum and star platinum has it's own endurance. So yeah it's essentially armor since star platinum defends Jotaro subconsciously from oncoming threats. Jotaro can also stop time which he didn't even do in this fight.
Actually in the series when they are falling from high places or are thrown at walls or being attacked by weapons they use their stands as shields.
Star platinum isn't armor, it's more like they each have their own durability that transfer damage. Think of it like...maybe spider-man is a stand, spider-man would need to get hit hard enough to be hurt to transfer damage, even tho he can shrug off hits that would really injure a normal human. Part five's Kraftwerk is a good example of this aspect of stands.
Keep in mind that Star Platinum can start and stop jotaro's own heart. If Jotaro is hit by a pressure point attack he can cure himself before it does too much damage.
