Now I'm hungry for a big dish of mashed potatoes...yum! May I share a little hack for breakfast hashbrowns? I microwave the whole potatoes about 2/3 done the night before. Chill overnight in the fridge. Next morning I grate them (your choice to peel them or not), then fry in a hot skillet in half oil, half butter. Season as you like. The pre-cooking eliminates a lot of the excess moisture and allows the potatoes to turn a nice, crisp, golden brown without the long cooking process that sometimes ends up with blackened potatoes. 😊

Your potato harvest is lovely! I love the assortment of preserved options you used as well. I made a rookie mistake this year with my potatoes by letting them dry outside. I had them on the covered patio but they still had some sunlight get to them. Sadly there were many that started to turn green which I’ve learned can be quite problematic for eating. It meant I had to discard several but we’ve been eating the rest fresh. Our harvest was small but very enjoyable. The purple powder is so pretty and will look beautiful stored.

Omg! I have so many potatoes we get from food pantries and our own garden that I can never figure out what to do with and they always end up going bad. My friend found me the electric canner from presto from someone who only used it 2x, and now I can't wait to finally put it to use! Thank you! So late to the game finding your channel! So glad I did! Great job. I think I use to grow some blue spuds and thought they were great. Nothing like a plate of purple mashes potatoes next to bright green peas…. So pretty 🇨🇦🌷
I just got a huge box of organic, purple sweet potatoes from Azure Standard yesterday. I am totally going to whip some up and put them in our freeze dryer! I wish they were regular purple potatoes but I think these will be a good change up from our usual mashed taters! Great video, thanks!
I dream of a potato harvest that big - nice job! Curious as to what the texture is of the canned potatoes? I have been hesitant to try because I think the texture will be weird/mushy.
Thank you! We actually enjoy the texture but I know of others who don’t. It’s not mushy but a bit creamier not the typical dry and flaky that you’d get from boiled potatoes. The flavor changes slightly but I don’t notice a difference after they are prepared. I’d recommend doing a small batch to see if you like them ☺️

Thanks for the video. This is all new to me. Why the potatoes take so long to dry on the table, not necessary at all and light green is not healthy either. Potatoes are easy to store and use fresh all year round. That saves a lot of work and energy.
Hi! When I harvested them the ground was wet and muddy. I left them on my table to dry and then didn’t have time to get around to preserving them. I store some potatoes but choose to preserve other ways because they don’t keep well for me in our home. They only last about 3 months before sprouting and Shriveling up. There is no way we can eat 150 lbs in 3 months. It just works better for our family ☺️
instead of using your vegetable peeler like a knife (peeling then lifting back to the top of the vegetable}, try moving the peeler "back and forth over the potato peels" WITHOUT lifting the peeler off of the potato. That way you are removing peels on the down and up motion. it should cut down on the time you have to spend on peel duty. (I hope my suggestion is understandable)
