Kreatopita: Greek Beef & Phyllo Pie

    Ingredients
    1 pound (500g) #4 phyllo, thawed and at room temperature
    3/4 lb (340g) unsalted butter, melted
    3-4 roasted red peppers, diced
    feta cheese: as much as you want
    shredded mozzarella or gouda cheese: as much as you want
    1/2 cup or more Panko breadcrumbs
    For the Meat Sauce:
    1 and 1/2 - 2 lbs (about 500g) ground beef
    1 large onion, finely chopped
    1/4 cup olive oil
    5-6 garlic cloves, grated
    16 oz (450g) crushed tomatoes
    1 teaspoon salt or more
    1/2 teaspoon freshly ground black pepper or to taste
    1 teaspoon ground sweet paprika
    1/2 teaspoon crushed red pepper flakes (optional)
    1 teaspoon crushed dried oregano or thyme
    Instructions
    Preheat the oven to 400 °F, 200 °C.
    Make the Meat Sauce: Ina. large pot over medium heat, add the onion with the olive oil and a pinch of salt. Cook the onons until soft and golden. Add the garlic and warm through. Add the ground meat, the seasonings (except for the thyme/oregano) and tomatoes. Mix together and cook over medium-high heat for about 25 minutes or until thickened. Remove from heat and add the oregano. Taste and adjust seasoning if needed. Add double the crushed tomatoes if you prefer a thicker sauce.
    Assemble the Pie:
    In a large baking pan (half-sheet pan will work or a roasting pan) add the breadcrumbs in an even layer.
    Divide the phyllo into 2 equal stacks. Layer the first stack in the pan and drizzle butter in between the phyllo layers (see video).
    Crumble some feta cheese into the center of the phyllo . Add the meat sauce on top. Spread the diced roasted peppers over the meat sauce. Top with shredded cheese. Fold the phyllo that is hanging outside of the pan over the filling. Drizzle butter between those layers as well.
    Gather each of the remeaining sheets of phyllo and create an accordion. Place them on top of the pie for a decorative, crunchy top layer. Brush and pour the remaining butter over the phyllo.
    Bake on the center rack for about 45 minutes or until golden.
    Allow the pie to rest for 25-30 minutes and serve. Kali Orexi!
    Notes
    Make Ahead Freezer Instructions: The entire pie can be assembled and frozen prior to baking. Once it is assembled, cover it with plastic wrap and then with foil and freeze for up to 2 months. When ready to bake either thaw in the refrigerator overnight and then bake it the following day as per the instructions or, remove the plastic and bake covered in a preheated 400 °F oven for 30 minutes. Uncover and bake until golden.

      It's funny, I'll test recipes and hardly anything goes wrong. As soon as I start recording, I guess it's because I'm distracted making sure that everything fits in the frame and technical things like that... lol!       @@DimitrasDishes just take it slow and easy dont be so stressed out it only makes us more stressed and distracted, because we overthinking over every thing and details, so fucking what if it isnt perfect the food will taste good no matter what and if you have forgot a ingrediens so what its normal.
      Its the same like thise thin young models all the young kids and girls young adult they wants to look perfect and be beauty, but no 1 is perfect, and the beauty isnt always what you the but the beauty is what is inside.
      I prefer to se and taste food that i can se some 1 have spend time and energy on and doesnt look like like a exspensive michelin resturant, i like that it isnt 100% perfect.
      So remember that the stuff/food is gonne be like you gonna make it, and if we dont like it then it just to bad for that person.

    OMG, I tried making this for my first time. I cant believe I have not tried this before, having all my cousins living in Greece. I made similar meatsauce like yours, but added mushrooms, and I used white cheap cheese (similar to feta, but from cows milk). I was about to try börek (also never done that), but decided to do this instead (skipping yoghurt/egg whisk for börek, and skipping rolling acrobatic with the dough). I put som sesam seeds on top.
    I used half the dough and made baklava syrup so that I can make baklava (guess what, for my first time also) later this night with the rest of the dough.
    When I was in Greece, me and my cousins used to visit pita/pie bakeries in the middle of the night, buying sweet apple/cinnamon sause small pies and similar feta cheese pies. Great memories.
    Thanks for all your recipes! I watch you and others to learn more fun food than my usual Swedish "eaten all my life" stuff.

    I am going to add everything you would use for a stuffed green pepper.
    Onions, garlic, mushrooms, rice, diced tomatoes, and peppers, and cheese.

    This looks outstanding!!
    I love to mix my feta with cottage cheese bc my Yiayia did it like that. Pretty sure she did it to save money but I got to love the way it melts & tastes!
    I LOVE the way u do the phyllo on top too!! It looks extra gorgeous & so delicious!

      It's amazing how many ways there are to make pita & all of them are TRADITIONAL (lol) bc that's how every family does it - differently!
      A few yrs ago, my sister & I got into a Spanakopita rabbit hole on YT and the variety of ways ppl make it totally blew our minds! The one thing that is the common denominator is they all look DELICIOUS!!
      BTW I actually made yr loukoumathes just LAST NIGHT & they were AMAZING!!
      funny thing is my first little cup of yeast sugar water wasn't looking like it was going to activate so I put another 1.5tsp in the same little cup & it all activated so (bc I'm cheap as hell lol), I just threw the whole thing into the batter mix & omg I've never had lighter, fluffier loukoumathes in my whole life!
      I use an egg in mine & they're usually kind of heavy tbh. Yr recipe plus extra yeast was HEAVENLY!! 😻

    I really like the recipes you show us. Besides being delicious, you explain every step very well. My mom used to make the kreatopita with the lamb that you mentioned. I remember she would make her own filo dough,, 15 of them. It was our Vasilopita, we are from Epirus.I would like to see your version.

    You are my hero! I am not a natural cook. My husband does 90% of the cooking (in self defense I think). I have successfully made several of your recipes. And actually look forward to making more. I made this in a 9x9 pan because it's just the two of us and doesn't freeze well after baking. I had extra phyllo thawed so I just piled it in your ruffles on top. And I was wishing I had a tee shirt that said, "It's all about the phyllo!" I like the way you just fling the phyllo around. It has given me more confidence in working with it, and not worrying if it tears or sticks so much. Thank you so much for giving your time!

    TY sweet Dimitroula mou! I'm gonna try to make this I made the lentil sauce similar to the meat sauce if that will be ok. If you want to do the lamb filling which is called arnopita, be my guess I gotten so many bags of lentils from the pantry where I live and I figure I could use it to make lentil pie called Fakopita

    Merry Christmas, Maria! As always, wonderful, most tasty and fun recipe. I made it last evening and we LOVED it ( the only change I made was that I used thyme instead of oregano and shredded cheese mix of cheddar + mozzarella) 🥰🥰🥰!!! I have half of the backing pan left and would appreciate your advise how to store it for later. I am afraid to freeze or covering it so the top doesn't get soggy. Many thanks.

    I have just made this recipe.
    Please correct the mince amount on your website. It says about 500gms but that’s incorrect to the conversion of 1.5-2 pounds.
    I made do with the 500gms of mince I bought. It’s in the oven now. I’m sure it will be yummy anyway. 😊

      This filling is much drier than the spanakopita filling so it isn’t necessary to score before baking :)

    Looks delish- I will try a vegetarian version with aubergine & mushrooms. Can I use olive oil on the phyllo pastry instead of butter ?

      Yes, olive oil would work. I have both the mushroom phyllo recipe as well as a pie made with leeks, and also an aubergine pie. We call it eggplant in the states. You can search for it here on UA-cam by typing my name and the veggies :)

    I will die believing Greeks invented Lasagna (or the basic meat/cheese/sauces between layers of dough) and also invented pizza. The silk road ended in Damascus, but Greece was the first stop, and they took all the spices and foods from the east and west and made magic happen.
