Thanks for the recipe. I made it for my teen daughter 9in BD cake frosting . I didnt have semi sweet chocolate. So I added 5T sugar to the meringue, and combined 214g of 70%cacao and 70g of 90%cacao of Lindt chocolate bars . All eggs n butters are organic. Tasted great, husband couldnt stop “tasting” the chocolate icing and all the teens love the cake. I got “hired” on the spot for their upcoming Bd cakes. Not sure if I have time for that but well received cake made me happy. Thanks again for posting. I printed and saved yr recipe for future use….thinking of Buche de Noel next week. Tis the season. You probably already tried and figured it out by now, but that’s not enough for an 8-inch cake. I don’t use this recipe, but I use 12 eggs for a cake that size! (So maybe triple this recipe)

I saw another UA-camr called The scranline use cocoa powder.
Not in this case as cocoa powder is a dry ingredient which will change the consistency of the icing. Try and find another recipe that uses cocoa powder.
Yes, but melted chocolate will have a more intense chocolate flavor and the color is much better. When you add cocoa powder, it stays a pale brown color! Sometimes I add some cocoa power and some melted chocolate.
Are the egg whites cooked?
Yes, double boiled to 150°F. Then mix it.
If I don't boil the egg whites does it change the texture or consistency. @@misswesley90
