    Thank you for this small batch loaf vid. This Southern boy loves you Yankee girls' accents, humor, and creativity.
    I bought a KitchrnAid mixer for my Yankee wife also. She had wanted one for decades and had been making 5-6 loaf batches since college.
    Her first KA use was a 5 loaf batch and the extra dough was made into apricot desert. Yummy.

      You can improve the gluten strength of AP flour by adding vital wheat gluten (2 or 3 tsp) and make bread flour. Vital wheat gluten is in the baking aisle near the flours in most groceries. More gluten strands developed during kneading traps larger gas holes in the bread and rises more.

    Thank you! For some reason KitchenAid doesn’t have the original bread recipes I used to use. This is great! Will try it with half whole wheat and half AP flour or if I get snazzy, Bread flour for a higher rise. I also used to use brown sugar with the whole wheat. I would add the brown sugar to the yeast water with a pinch of dried ginger, makes the yeast go crazy and no, you don’t taste the ginger.

    I just made this. I'm making meatloaf and thought it would be great for a giant meatloaf sandwich cut into single servings. I changed my mind it's going to be a cheesy garlic bread. Smells amazing thank you.

    As I've watched dozens of vids on the kitchenaid mixers, and bread. Trying to figure out if she would not burn out a smaller model, we are a family of 4, so smaller would be better, but I myself am a fan of over building, and have seen a 6 at pro teardown video, and I trust what I saw. Especially since my wife is like me, hard on everything, even though the directions say elsewise, usually for convince purposes.
    Thanks for the very enjoyable real world content, not the made by Mrs. Jones/barbie mom infomercial.

    LOL! When you wrote that your "accent was sounding pretty thick" I thought it was going to be South American or Irish or Egyptian or whatever. But no, it sounds like where I came from!     Thank you I wanted to used my bread machine but I have to find my paddle. So i decided to used my kitchen aid mixer. I did used to make it by hand but I work everyday I don't have time to do kneading by hand lol.. Great video! 👍👍👍

    Thanks. I just got the smaller Kitchenaid and gave it a try with a favorite recipe of ours, chocolate granola wheat bread.
    I was told to do the whole thing on speed one and it took almost as long as to do it by hand. The hook never picked up the dough. The dough pretty much stayed on the side of the bowl, so I kept pushing it in with a spatula.
    Its a dense two loaf recipe so I was wondering if it was too heavy for the mixer.
    At any rate the bread turned out fine. But your video has given me some ideas to try out next time.

    Finally, a bread recipe I can handle. My dough hook came with a sticker on it to not run the mixer over speed 2 with the dough hook.

    I let the dough hook mix my dry ingredients for a few minutes and then pour in the wet ingredients and let them mix them in, too, before I turn the mixer up and let it beat it for a few minutes. Then, I dump it out on a bread board and knead it a little bit before I dump it in my proofing container for its first two rises. After an hour I dump it out, form it into a loaf and let it rise for an hour before baking. Nothing complex or difficult. I learned my bread making in a Breadman and making it in a Kitchen Aid is much easier and faster. It still takes about three hours but it is a lot easier.

    This is perfect. I prefer not to use loaf a pan and it's a single loaf. I plan on trying this today. I would really like to use bread flour. Anyone know approximately how much more additional water should be used?

      I don't see a problem using 2%, If I had it on hand I would use it. little tip, depending on the humidity in your home, you may need to ad more or less. You don't want too dry of a dough.

    Make sure ambient temperature is at least 72 degrees. Yeast inside dough not like cold cold temperature. I will follow your recipe but I have to use bottled water since my tap is not good for drinking. Also I will leave yeast longer in the water. I want to see if that helps.

    I love your video, and I have done this a few times...but it has never risen as high as yours..it's delicious but not as high as yours...do you know what I am doing wrong? (I add garlic powder, and one time I used whole wheat flour) could this be the reason why it doesn't rise as high? Thank you

    I put the. Flour, salt sugar, and yeast in the mixing bowl and let the dough hook mix it up real good. I will use my spatula to push the edges back towards the center. After a few minutes mixing I pour in the liquids and let the dough hook do its thing until it walks up the dough hook. I will also add flour or water to the bowl until the dough gets to the consistency I want. If it is sticking to the bottom of the bowl I will add a couple of TBS of flour until it stops sticking and has licked the bowl clean. If there is a lot of loose flour floating in the bowl or the dough does not feel wet I will add a little water until the dough ball licks the bowl clean. Allow several minutes to allow any addition to get incorporated into the dough ball. After the dough has finished kneading I will let it sit in the bowl for about 15 minute to autolyse a bit.

    So far I've NOT been successful making bread. After baking, it's still wet and heavy, i can't figure out what im doing wrong.
    I use the bosch small batch for basic white bread.
    My new bosch compact stand mixer arrived yesterday but from time to time over many years when ever i tried making bread it always comes out the same heavy, wet, not eattable. I had the artisian KA and the original Cuisinart with timer now the bosch compact stand mixer.
    I thought it was going to work yesterday because I saw it pull away from the sides of the bowl, i let it knead 5 mins on speed 1 or 2, it made a nice a ball and it had some stretch but i dont think enough.
    I split it into 2 loaves, rised it twice in warm spot, first time upwards to 1 hr and second rise about 45 mins.
    But it didn't rise as much as ive seen on other vids.
    It baked about 35 mins on 405F and looked and smelled gorgeous but not nice inside due to being wet. No big air pockets.
    Should I be kneading longer, should i add more flour? It's not gooy but i do feel a little sticky

    I used bread flour instead of all purpose and the dough ball was way stickier I don’t know if this is the reason also my bread never comes out as big as your loaf it always stays skinny and doesn’t proof well. Any ideas?
