    Ingredients:
    2 tablespoons olive oil
    1 large onion, thinly sliced
    1 red bell pepper, sliced
    3 garlic cloves, minced
    1 teaspoon ground cumin
    1 teaspoon paprika (smoked or sweet)
    1/4 teaspoon cayenne pepper (adjust to taste)
    1 (28-ounce) can of whole peeled tomatoes, crushed by hand or chopped
    Salt and pepper, to taste
    5-6 large eggs
    A small bunch of fresh cilantro or parsley, chopped, for garnish
    Feta cheese, crumbled (optional)
    Warm crusty bread or pita, for serving
    Instructions:
    Prepare the Sauce:
    Heat the olive oil in a large skillet or frying pan over medium heat. Add the onion and bell pepper, sautéing until they start to soften, about 5-7 minutes.
    Add the minced garlic, cumin, paprika, and cayenne pepper. Cook for another 1-2 minutes, until fragrant.
    Add Tomatoes:
    Pour in the crushed tomatoes and season with salt and pepper. Stir to combine all the ingredients.
    Simmer the tomato mixture for about 10-15 minutes, or until it thickens slightly. Stir occasionally to prevent sticking. Taste and adjust seasoning as needed.
    Poach the Eggs:
    Using the back of a spoon, make small wells in the sauce, one for each egg.
    Crack an egg into each well. Season the eggs with a little salt and pepper.
    Cover the skillet with a lid and cook over low heat for about 5-10 minutes, or until the eggs are just set but the yolks are still runny. Adjust the cooking time if you prefer your eggs more or less done.
    Garnish and Serve:
    Once the eggs are cooked to your liking, remove the skillet from heat. Sprinkle the shakshuka with chopped cilantro or parsley and crumbled feta cheese, if using.
    Serve hot, right from the skillet, with warm crusty bread or pita for dipping into the sauce and egg yolks.
    Tips:
    Adjust the Spice Level: Shakshuka can be made as mild or as spicy as you like. Adjust the amount of cayenne pepper to suit your taste, or add chili flakes for extra heat.
    Tomato Substitute: If you don’t have canned tomatoes, you can use fresh ripe tomatoes. You'll need about 4 cups of chopped tomatoes.
    Serving Suggestions: While traditionally served for breakfast, shakshuka is a fantastic meal any time of day. It pairs well with a green salad for a light lunch or dinner.
