How To Make Kalojam Sweets

Ingredients:
Kalojam
1 Cup Powdered Milk
2 ½ Tbsp All Purpose Flour
1 Tbsp Semolina
¼ Tsp Baking Powder
1 Tsp Clarified Butter
7-8 Tbsp Milk
¼ Tsp Red Food Color
Syrup
1 ½ Cup Sugar
3 Cup water
4 Pc Cardamom
Coating
Reduced Dry Milk Powder / Mawa
Instructions:
1. Mix powdered milk, all purpose flour, semolina, baking powder, clarified butter, milk, and red food color until dough consistency
2. Make round-like shape using your palm
3. Deep fry in low-medium heat until dark golden brown
4. In a pot, add sugar, water, cardamom and kalojam then soak for 1 hour with lid on with low heat
5. Remove kalojam from the pot, let it cool then coat with dry milk powder also known as mawa
6. Ready to Enjoy!

The idiots that's complaining about the red colour inside. The whole point of that is to resemble the the fruit Jamun(Hindi) Jaam(bengali). That's y it's called kala Jaam sweet. Google the fruit and see what it looks like
Plus, there's no conclusive evidence that food coloring is bad. Not to mention, literally everything has food color and dyes - food, body wash, shampoos, laundry detergent, etc. If anything, only thing is that some people may have an allergic reaction to the food coloring.

I tried the same measurement but the skin(dough) is getting very rough, a lot of crack, not smooth as shown in the video. Any tips?
Try using warm milk and add and add extra milk to make wet texture knead the dough you will the dough is too wet so for that keep the dough aside for 5 min after that knead again
How many grams is 1 cup? Is the 1 cup measurement same for milk powder and water?
Milk Powder is 125 grams for 1 cup.

Hello!!! Absolutely love all your recipes... I tried this kalojaam recipe today.. Followed your recipe perfectly (no food colour)... It turned out to be very soggy!!! Tastes great though... 5 mins in to the syrup they started breaking apart.. Can u guide me? The milk powder i used was everyday one(sweet powder)
Oh that is may be because Everyday is a tea whitener and not milk powder try with milk powder :)

Same happened with me first time.. It is because the dough is hard!! You have to make it as soft as you can. Then keep the dough for rest some minutes. Then give it the shape of sweet. But have to make the dough so soft by adding more milk or egg.
Their milk measurement is not right. Add milk until very softened
After u make the dough u need to knead it until it releases oil in your hands. It takes around 5 to 7 mins more.

I think these are not available anymore... sweet shops in Dhaka used too much food color for this recipe and the govt. Prohibited that ...
buy or dehydrate beet root and you got your natural red color....
It is almost available everywhere. But mostly you will find it in the old traditional sweet shops like jadobghosh, bonoful, bikrampur etc
