Thai Red Curry Scallops

- The easy secret to great Thai Curry is using "Maesri Brand" canned curry paste available at most any Asian Market. It has chilies, garlic, shallot, salt, lemon grass, sugar, Kaffir Lime, galangal, coriander seed, cumin and cardamon. It comes in a can like tuna and is 4 ounces in size and will make your kitchen smell like a Thai Restaurant.
Ingredients:
1 red bell pepper
1 small onion
5 cloves garlic
1/2 teaspoon dry ginger or 1 Tablespoon fresh ginger
1 cup of pineapple pieces
12 ounces scallops or more
2 Tablespoons Maseri red curry paste for medium spicy
1 can coconut milk (12 ounces or 14 ounces size)
2 Tablespoons fish sauce
Juice of two limes
2 tablespoons water mixed with 1 Tablespoon Cornstarch
I like to serve with plain white rice or ramen noodles.
For garnish use cilantro or sliced green onion tops.
When using scallops please rinse every single scallop under running water with two hands massaging them a bit to remove any sand. Then when you are done rinsing them, rinse them individually one more time. Nothing worse than having scallops that have the invisible sand still on them. I've gone to pretty fancy restaurants and the scallops had gritty sand served to me.
Scallops are available for a good price at Aldi's and also Fresh Thyme Markets.
You can use shrimp instead, but scallops are so tender and more delicious and a treat!
Start your rice first. I like to have it cooked and waiting before starting the stir fry.
While the rice is cooking, slice your onion and bell pepper.
Cut up your pineapple, but I used frozen pineapple for convenience.
Cut up your garlic if desired.
Clean your scallops by simply rinsing them under water and then dry with paper towels.
Measure out the rest of ingredients.
If you cannot stand fish sauce, use soy sauce.
Use a measuring spoon to measure your curry paste, not just any spoon!
You can use more curry paste if you really like it spicy ❤️ 👹🥵🌶
It is fairly powerful though.
Just follow the instructions in the video to prepare your meal.
It comes together quickly.

Good morning Yumeka! Yes curry is different things in different countries. Here we mainly just use grocery store curry powder. In Thailand it is a wet paste made using many ingredients pounded into the final product. This curry paste is powerful stuff, but using one Tablespoon per cup of coconut milk tames the heat to medium spicy.

When I lived in San Diego, I would go to an Asian Market on University Ave. I don't remember the name of it though, maybe it was Vien Dong. I would get the curry paste there. There is always 99 Ranch Market, I there are several of those in San Diego areas 😁
