Turkey Gravy

This turkey gravy may seem advanced but it is very easy. So flavorful you will be tasked to make the gravy every year.
3Tbsp all purpose flour
1 stick butter
1/2 yellow onion
1/2 green bel pepper
1 stalk celery
5 cloves garlic
juice of 1/2 a lemon
6 oz beer
1 1/2 cups chicken stock
2 tsp Creole or Cajun seasoning
1/2 tsp dry thyme
1/2 tsp dry oregano
1 tsp dry sage
2 tsp hot sauce
1 tsp salt
