Raising, Processing and Cooking Duck Pasture to Plate

This last spring we raised pekin ducks for meat. We raised them from little ducklings, till they were large full grown ducks.
We processed the ducks on the farm. Using wax we plucked the birds clean, removed all the small down and pin feathers, and the final product was beautiful!
We only harvested a few ducks last year, and so we have been waiting to have them for a special dinner.
It was time to cook the roast duck, so K made a special sauce out of port, garlic, cranberries, and orange. She roasted the duck breast down in a pot, slowly rendering the fat.
Finally she cooked the potatoes in the rendered duck fat, and served a delicious dinner to friends!

my wife and I raised some Peking ducks and you know I just don't like the taste of duck. they grow so fast and they put on so much weight in such a short amount of time that they are completely beneficial and I will still grow them and feed them to my family. however those maybe my salad nights LOL. they really are fun to have around

my favorite way to pluck a duck so far has been scalding then hand plucking. Using paraffin is quicker but is expensive and a pain to use paraffin without a scalder that reuses the paraffin.

Still think the ducks didnt get busy - no grassy meadow to chew and walk around, and no pond to swim and keep clean. Grassy meadow (exercise with green chlorophyll magnesium and NOx amino acids), bugs (protein) to eat, and pond (exercise and happy duck playing/diving/ splashing) ... living with chickens, turkey, guinea, rocky barren meadow, ... and sour-faced ducks have no inclination to breed. Happy ducks procreate, unhappy ducks dont. ;-C

I live in an area where I have to take my ducks for processing. We're not allowed to slaughter at our house. We can keep pigs, goats, horses, llama's, chickens, ducks, and geese, but we cannot slaughter them... :-/ We raise a good 20 - 25, and it makes it worth it having meat all year long

It's been a while since I've had to edit a UA-cam video, but I seem to recall being able to tack them in here and there, prior to publishing. Maybe I'm just recollecting wrong.

It's tricky getting those feathers off ducks using the hot water dip method. The temp has to be higher and you have to put in Dawn dish soap. Then just throw them in the de-feather machine thingy.

I think that I've been abductured !!!
can i ask how you felt the first time you had to kill a bird. We have not started yet. but my main concern is what i will do when it comes to the slaughter of any of my animals. I am a big baby. i cried when i saw a pidgin get run over by a car. haha. I just watched maybe the first minuet of your duck slaughter and to me it looks horrible. while the duck is slowly bleeding to death you can still see it breathing and moving. this puts me off as i feel the bird is suffering. is this the only way ? could you not just chop off the head ? I know in myself that if i can bring myself to do it once or maybe twice i will get used to taking an animals life. and if my own farmstead is to work then i have no choice. but i just dont want to be stood there watching the animal slowly die. Love every video you post. but for now i will not be watching any more slaughters lol

Man this is just nasty. kids playing with raw meat and walking on cooking surfaces. Drinking straight from bottles that you’re serving people from. 🤢🤢🤢
oh. my. god. this is soooo sad the fact that you rased them then ate them i dont know no shade it’s not like i don’t eat meat but i couldn’t imagine this it’s like eating my dog or cat to me
