How to Make Classic Vanilla Pastry Cream

  • Here's a classic vanilla bean pastry cream recipe. Click 'SHOW MORE' for recipe ingredients and baking guide.
    Recipe makes about 1 ½ cups
    Ingredients
    1 cup 2% milk
    ½ vanilla bean or 1 ½ tsp vanilla bean paste
    3 large egg yolks
    3 Tbsp sugar
    2 Tbsp cornstarch
    2 Tbsp unsalted butter, cut into pieces.
    Baking Method:
    Heat the milk with the scraped seeds of the vanilla bean or the vanilla bean paste until just below a simmer.
    In a separate bowl, whisk the egg yolks, sugar and cornstarch. Ready a bowl with the butter, placing a strainer on top of it.
    Gradually whisk the hot milk into egg mixture and then return it all to the pot. Whisk this constantly (switching to a spatula now and again, to get into the corners) over medium heat until thickened and glossy, about 2 minutes. Pour this immediately through the strainer, whisking it through if needed, and stir in the butter.
    Place a piece of plastic wrap directly over the surface of the custard, cool to room temperature and then chill completely until ready to use.
    The pastry cream will keep up to 4 days refrigerated.

    cups converted into grams, for us, the european guys 'n girls!! So..
    240gr Milk
    ½ vanilla bean or 1 ½ tsp vanilla bean paste
    3 large egg yolks
    40gr sugar
    16gr cornstarch
    30gr unsalted butter, cut into pieces.

    One of the best cream i've seen an tasted is silky and smooth, also is so rich and my favoorite part it doesn't thickens ass it chills, it stays as a creama anad and not an ugly kind of jello, jikes. LOVE THIS RECIPE

    It's not easy to find vanilla bean in my country. Can I use vanilla extract instead?

      Yes of course (use the same amount) ! I use vanilla extract for this recipe all the time! Only difference is you won’t the see the speckle of vanilla beans that you’ll get from using vanilla bean paste !

    This is the only pastry cream recipe I’ve ever made & it’s so good. Instead of regular corn starch I use maizena which is flavored corn starch used to make atole, a Mexican drink. It enhances the flavor if you’re only using vanilla extract. Also I tried strawberry maizena today & the pastry cream was delicious! Highly recommend this recipe

    Yum yum Anna! A must have in so many recipes! And plus it tastes soooooo good! I love making my own Napoleons....yum, nice flaky pastry dough baked and then assemble with pastry cream one layer and sweetened whipping cream and then drizzle with milk or dark chocolate 🍫

    Once the pastry cream begins to thicken you should watch for the presence of bubbles. Once you see the first bubbles you must continue to whisk for about 2 minutes after that or else your pastry cream will turn to runny soup in the refrigerator! This step is essential!

    I tried making this pastry cream , except that I used vanilla essence instead of paste or actual beans from its pod. I used steel pot as well. To look at it’s very smooth and thick like we see in this video. But while eating the custard, it felt like I’m eating some powdered cream and that powder doesn’t melt in mouth. Where did I go wrong ? Is it because I added more eggs than required ? But I added only 3 egg yolks as mentioned in the recipe. Is this because I kept it on stove for too long ? Is it corn starch ? Please help

    Hi Anna! Thanks for yet another of your great recipes. I've always known that pastry cream is made with flour - 'creme patisserie'. Do you not use flour? Is custard cream different to creme patisserie? I'd like to use this cream for cake filling as opposed to American buttercream which is so sweet... can it be used or will it get gooy when the cake layers are added?

    I found the pastry cream didn’t set firm enough for my vannila slices will I add another egg yoke or some cornflour and how much

      Eileen, You have to make sure you cook out that cream until "boiling" bubbles start to form from.
      Then cool to room temperature then chill. Cooking until you see bubbles forming is key!

      Not necessarily, because then it'll most likely turn into a creme brulee custard than a pastry cream

      You actually can she said she uses it because the cream will be shown on the dessert. Just be careful to not add too much or it may change the consistency of the cream

      yes you will just won't have the specks of vanilla through the custard.

      You may want to thicken it up a little more. Also, you should make a "dam" with frosting so that the pastry cream isn't pushed out the sides. (just pipe around the inside edge between the layers and put the thicker pastry cream inside.) Once you put the fondant on, the weight of it will push out the pastry cream.

      You can always use salted butter in place of unsalted butter. Just be careful with added salt in the recipe. You don't want to add too much.
