    For those who are confused, gelato means frozen, and fruit gelato usually doesn't contain milk or dairy, only water. The fact that gelato is translated as "ice-cream" into English doesn't mean it has to contain cream at all. Correct translation different cultures and recipes. Its not a sorbeto or whatever, its a fruit gelato.... And its better to add plain sugar and fruit than all those artificial stuff many eat and call "icecream"

      I would say that it depends really. Gelato really is closer to sorbet than icecream (in english that is). And as to the artificial stuff. If you make your own icecream theres none of that and theres way less sugar...

      gelato means frozen, not cold. Gelato is actually a word that comes from the past pariciple of the verb gelare, which means "get cold".

      In spanish is pretty the same, gelato in spanish is helado wich means frozen. Gelare is helar, which means to froze. Get cold is enfriar, reffredare in italian I guess.

      Fruit, sugar, water. When you don’t do it commercially you can do it without water. My strawberry sorbet (this is sorbetto, not gelato) I make without water.

      Yes but no. Sorbet has egg white in it for a slurry like consistency. That is water based gelato. Quite common in Italy.

    I went to Italy at 6 years old. I have NEVER ever had that taste again and it stands out in my mind clear as day as one of the best foods I’ve ever eaten. Sweet, fresh, refreshing, creamy, tangy (lemon), and just fulfilling in every way.

My aunt used to have a gelato shop in tuscany, it was really the best gelato that i have ever tasted. When eating it you could feel the freshness and quality of the fruits, to this day, i still struggle to find a gelato that good

    "Gelato" in Italy is a generic word for ice cream and frozen deserts in general. This is "Italian ice", and is more similar to sorbet. In English, the word "Gelato" generally refers to "artisanal Gelato", a relatively dense dairy-based frozen dessert, made in a similar way to ice cream but with more flavouring added and less air whipped in.

    That is what I would call sorbet. Make it myself too. Made strawberry last Saturday. However, since I don’t do it commercially but for myself I don’t add water. 1 part sugar, 2 parts very ripe delicious strawberries. The taste is incredible

      sorbet has inside crystallized water (small flaks) and cream. You can feel the crystals on the tongue. Fruit gelato is made without cream.

      That’s a question of definition, but I learned sorbet is fruit, sugar and water when I did my icemaker course. No cream. Even in Italy they make it this way, called Sorbetto. When sugar content is about 33-35% there is no crystals you can feel.
      Gelato is the overall verb for ice cream. It can also be made with eggs in stead of cream, that will bring out the flavour more because cream suppresses taste.
      FYI Been making ice creams for about 40 years now.

    Ice cream has around 14-24% sugar per weight and gelato has around 19% so it really just matters what brand you buy, also if you are that worried maybe don’t eat stuff that’s high in sugar eat Greek yogurt or make your own ice cream or gelato.

      I agree if you can make your own products it's better but what is wrong with wanting to buy products with less sugar? Most of the food products have way too much sugar generally, I don't get why people should just shut up about it, we know all the health problems that comes from it. Also kids can't do cook or make their own food.

      ​@@sasousousa5071 Because this is how much sugar it has. As was literally explained in the video, this amount of sugar is necessary for the texture. It's not like people eat the whole tub, or eat it regularly, so the amount of sugar in a single serving is really no big deal unless you're diabetic.

      I agree, certain dishes taste good because of how it make. I make "fake" dish at home, too, to avoid added sugar. Acceptable but nothing like the real deal. But sometimes I want to treat myself something really delicious, I go out and eat stuff exactly how it made. No substitute. 😅

    I love Italian ice cream very much. A friend who prepares it with extraordinary flavors according to rather ancient recipes (Malaga, Panera, etc.) told me that all this sugar is necessary because the sense of taste is less sensitive at the low temperatures of ice cream.

    If you wondering the second fruit that was shown is called persimmon. The skin is bitter and crunchy. The flesh is sweet and juicy. It’s one of me favourite frutas

      There are some types of persimmon with hard, dry skin that need to be peeled, and others with a thin skin like a plum that can be eaten with skin.

    lol sugar in moderation is fine. The amount of gelato they serve you is quite modest. I think ppl need to worry more about the processed junk and hidden sugars in their white breads and pastas and other stuff at most American grocery stores.

      Avoid corn syrup, glucose could be regulated by the body but not fructose. They are super cheap and common in junk food

      It's probably not any better or worse than eating ice cream. Both have sugar. One has benefit of fruit. One has the benefit of nutrients from milk/cream.
      I don't eat either one bc sugar causes me so many problems.

      In Italy fruit flavoured gelato doesn’t contain milk! Only the cream based flavour like chocolate, vanilla, biscuit, etc contain milk. 😊 (I’m from Italy)

      Artificial flavours mean chemical compounds to give food flavour like raspberry, strawberry etc. She’s using real fruit, not raspberry flavour and pink colour! Sugar is NOT an artificial flavour but a natural sweetener (as opposed to artificial sweeteners).

    Ok, so. Sorbet usually has a slurry like consistency that is achieved with the inclusion of egg whites. Fruit flavoured gelato is usually water based, and indeed, vegan.
    Gelato traditionally has really little milk, being custard based, that is the difference with ice cream.

      I think its a cultural difference. Idk about other places but Sorbet in America is only fruit, water, and sugar and Gelato always has dairy. It seems that in Italy (from what i have seen in other comments) sorbet has egg whites and Gelato only has dairy for the creamy flavors.

    I’m American, I’ve never eaten gelato. The only gelato I’ve ever seen, always has wheat in it, which I thought was weird, but I can’t eat gluten, so may be I’ll get to try something like this some day, and it be safe to eat. It looks delicious!
