  • Happy Tuesday! Today's video is a super fun cooking video! I wanted to give you a quick peek into how we do Sunday Dinner in the Mennonite culture. It's common to invite a BUNCH of people for dinner and feed them like Kings! Below are a few of the recipes I made. As I said in the video, some of the recipes aren't my recipes so I sadly cannot share them. I apologize! I'll see you next week!
    How I prepared the Chicken:
    Butter Mixture:
Several Sticks of butter, room temperature
    Chopped fresh parsley
    The juice of 1 lemon
    Several cloves of garlic, minced
    Salt & Pepper to taste
    Onion powder
(several tablespoons of olive oil, optional)
Combine & place under the skin of the Chicken, as well as on the top of the skin. Stuff chicken with onions, lemon halves, fresh parsley & cloves of garlic. Drizzle with Olive oil, this helps prevent the butter from burning!
Add onions to the roasting pot to add extra flavor while baking! Also add some water to the pot to prevent your chicken from drying out!
Tip: If you are serving mashed potatoes, consider making gravy from the chicken broth!
    Peanut Butter Pie recipe:
    Crumb topping:
    3/4 Cup powdered sugar
    1/2 Cup Peanut Butter
Combine and mix until crumbly. Spread half in the bottom of Baked pie shell.
    Pudding:
    2/3 Cup sugar
1/3 Cup clear gel or corn starch
    3 egg yolks
    2 1/2 Cup Milk
Combine until thickened, remove from heat and add:
    2 Tablespoons butter
    1 tsp vanilla extract
fill crust & let it cool. Top with whipped cream & remaining crumbs.
    My pie crust recipe:

My mom taught me to wash as I go. Not only is it better to not have a sink full, but its also easier to clean them, because you don't have dried/ stuck on foods to scrub off!

The pre-shredded cheese has a coating on it that is a preservative to keep it from drying out. A block of cheese will also sometimes have a coating but you quickly grate it off. This is what makes the difference. When you shred it yourself there is no coating and the cheese melts and blends into your dish smoothly.

I think it's cornstarch put on the cheese, not to prevent drying out, but to prevent it sticking together in one big glob during shipping, and temperature changes.

I like your thought process on making the pies, bread and potatoes ahead to save time. Have you considered using real butter to make your pie crust, for health reasons? I switched 10 years ago when I learned how terrible Cristco is for our body. God made butter. Thank you for sharing.

You know, they sell frozen shredded hash brown potatoes in the grocery store? Some already have onion in them. They work great for cheesy potatoes and save so much time. No one would notice the difference, since they're actually potatoes shredded, then frozen. Once I found them, it changed everything!

My youngest son's birthday was next in line. I asked what he wanted for his birthday. He replied peanut butter, (bc it is his favorite thing Ever.) Of course, I asked peanut butter ..cake?, cookies?, brownies?, fudge?, pie? PIE! lol
He had never been exposed to a peanut butter pie, but even his young mind knew it had to be FANTASTIC.
I had only known a cheesecake like peanut butter pie. When my aunt heard what he wanted, she sent me a recipe she had never used in the 40+ yrs she had it. This recipe differs from yours only by ~25% more sugar.
He and all of us Loved his birthday dessert! We plan to gift them for Easter.

Vegan here too but still interested! Wendy, you could veganize all of this easily and make a seitan loaf (make it like a roast beef-yum!) for the “meat”. Hmm maybe i should start a channel haha.

My 1st time to your channel and it was so warm and welcoming! It's always fun to see different techniques and interpretations on recipes. It brings back happy memories of when I had a similar weekend routine. I couldn't help but think you had to have been exhausted from all Sat in the kitchen, esp with the sweet little "marshmallow" keeping you company all day! For about 20 yrs I lived a short 10 mins from Lancaster County, PA & it was so therapeutic living in that part of the world. Overall, people are so good, calmer, forgiving, live a simpler life, hard workers and grounded in the Gospel and family values; kinda like the US used to be in the 1950's. The farms were beautiful, and the homemade food delicious and comforting!
And the quilts and woodwork of amazing quality and simple beauty.
For your green beans, were they fresh, bottled or frozen? I'll have to see if you previously posted that recipe.
Thank you for sharing your sweet spirit.

When you took the Dr. Pepper out of the fridge, my first thought was, "What was THAT going to be a secret ingredient for? What amazing thing am I going to learn?" And then you took a sip! It's been a long time since I have been treated to such a beautiful Mennonite Sunday dinner. I think if I want one now, I will have to make it. Thank you for your inspiration.

Pump a little lemon zest into the butter mix 🤌🏼 lemon juice flavour burns away so you have acidity but not much lemon flavour but the oils of the zest release wit the heat and you get all that lemony goodness 😊

Hey love! Pre-shredded cheese is coated with things to make them not stick together, hence why they won’t melt together! So you’re completely right as to why shredded yourself is best!

My family makes a similar potato casserole but we mix the potatoes, cheese and cream of chicken sauce together, and top it with butter soaked cornflakes and its so delicious. Adding a teaspoon of Beau monde spice really adds alot of flavor too.

A little hint to warm up the dough quicker is to put it in your oven and turn on the oven light, I will also put a pan on the bottom shelf and add hot water. This is a good way to proof the dough without drying it out. I will use a wet cloth to cover the dough.
