    I dehydrate them, powder them in a coffee grinder and store the powder in a jar to add flavour and thicken soups etc. If you vacuum seal the jar they can last until next year's glut. You can fit several in a pint jar!

    Roasted courgette and garlic soup is delicious and freezes well. Roast garlic and courgettes until soft. Add to saucepan with chicken or veg stock, frozen peas and grated parmesan then blitz till smooth. Recipe is on line.

    I roast mine in 2cm cubes with a little olive oil, sea salt and pepper until they’re all caramelised and so sweet and either eat them straight away, sometimes quite a bit disappears while I’m dishing up, or I freeze it and add to pasta sauces and casseroles in winter. I make my pasta sauce like this with roast zucchini, red peppers, tomatoes, onions, garlic and eggplant all together and purée it all and can it. They do take a while to roast to this stage but so worth it!
    My husband also makes a dish with by pan frying zucchini in diagonal strips then caramelising in sweet chilli sauce and throwing in prawns when it’s almost done. Mixed through spaghetti with a bit of Parmesan cheese or on a pizza it’s AMAZING!
    I’m in the depths of winter here in New Zealand and really missing my zucchini’s. Can’t wait for spring so I can plant way too many zucchini’s again haha😁

    Grate and dehydrate and use in all sorts of things (enchiladas, burritos, pasta sauces, cakes. This year I'm going to give courgette kimchi a try.

    I love pickled zucchini! I cute them lengthwise in wedges, stuff them into jars with spices and fill it up with brine. My favorite combination of spices is coriander seeds, mustard seeds, a piece of garlic, a piece of lemon peel and a small chili.

    My big marrows.... I skin, fill with a mince mixture, bake covered in tomato and onion. Top with grated cheddar. Slice as a swiss roll. Serve with buttered baked potatoes

    Massive zucchini, the kind you want to put a baby bonnet on and place on an unsuspecting doorstep, is delicious when sliced lengthwise, seeds removed and brushed with olive oil. Fill it with sliced tomatoes and frozen Italian meatballs from Walmart. Season with seasoning salt, powdered onion and or garlic and Italian seasoning or herbs of your choice. Cook until done, sprinkle with cheese, cook a little bit more and serve with rice.

    My glut has started although we have a lull in the proceedings thank goodness. They seem to be all the yellow ones at the moment. A lot of these recipes will be good when my patty pan summer squash get going (3 different types what was I thinking!! LOL)
    My mum used to make an amazing courgette terrine when we had summer family gatherings. I recently found her old recipe card when clearing put a box of stuff from their house I had forgotten about. Very excited to give that a go again. It is a bit involved and uses a Bain Marie to cook it in the oven but it was the most requested summer family gathering dish. Really unusual and tasty.
    Someone on Instagram posted a recipe last year for Courgette brownies, they are vegan and easy to make and so delicious.
    I also roast chunks or courgette with garlic, Peppers onion and olive oil salt and pepper, then portion this up and freeze so in the winter I have roasted veg for all sorts of recipes from lasagna to soup to my favourite sausage caponata style stew

    Ooh great video and ideas. Always seems so obvious when someone else has an idea. I make a lot of ratatouille with peppers, onions and tinned tomatoes, freeze and use during the winter served with chops or sausages and any leftover can be liquidised into soup for lunch the next day. I also have a good recipe for chocolate courgette cake and found a great recipe for courgette and ginger jam! Well worth a try jam makers out there.

    Don't forget Zapple Pie!!! Peel the zucchini, halve it lengthwise, scoop out the seeds, and then slice it thin like you would apples. Pick your favorite apple pie recipe and just use the zucchini slices instead. I add a bit of lime juice to lend some tartness, but that's optional. My former neighbor Jodie taught me this one.
    And at the far end of the season, I always let a few grow absolutely enormous. Like small watermelons. I pick a couple just when the color starts to fade toward yellow and use them as a Halloween decoration. You can carve them like a pumpkin and stake them vertically in the yard, or at the top of a "pumpkin totem pole". I sometimes leave the last one on the vine for seeds, but only when I didn't have other similar squash growing nearby. A funky hybrid zucchini is not high on my list...

My courgettes are still small on the plant, but my hubby’s coworker gifted us three HUGE ones that I wasn’t really sure what to do with, other than make zucchini bread. 😂 These were great bits of inspiration for my kitchen!     If anyone is trying to save on energy bills or time, please note that you can microwave courgette to get a very similar effect to steaming, or use an air fryer for a quick roasted effect. I chop them lengthwise into quarters, add a little garlic salt (or plain salt if you prefer) and pepper to the fleshy innards (no extra water or oil required, although I do add a little spray oil in the air fryer to prevent sticking). Cook them face up in the microwave for 2-3 minutes and voila! Healthy side dish sorted. I sometimes add some paprika, cheese and tuna on top to turn it into the main part of the meal. I'm sure lots of other toppings would work but that's my favourite one. :)

    My favorite is making lemon zuchinni bread. 😋 Last year I also canned some in pineapple juice to use later. I just tasted a jar last week and you'd never know it is zuchinni.

    I like a nice, simple courgette salad. Grate your courgette and season with lemon juice, the zest of a lemon, salt, a pinch of hilli flakes or half a fresh chilli, and some well chopped mint. Serve as a nice side or as a part of a bigger salad.
    They also keep veggie burgers you might make with beans and grains nice and moist on the inside.

      @@LizZorab My zucchini aren't big enough to eat yet, but your comment sent me on a youtube search. I found that zucchini can be made into almost anything, you just have to search for "zucchini ______" and you will get several sites. I found recipes for candy, jerky, mock apple pie, hash browns, cubes to be used for soups and stews, and powder, which can be used in place of part or all all purpose llour and is gluten-free and can be used in all baked goods.

    The squash vine borer got to my only zucchini plant... we eat them everyday and i was hoping for a glut. I have a couple of new seedlings and hope to try again late in the season. We love chocolate zucchini cake which is super moist!

    We cut slice them some 1inch thick some 1/2 inch think freeze on a tray the thin ones fry really well if added to a hot pan direct from freezer the thick ones get added to casserole dishes in winter, we also spiralize then and use instead of spaghetti, or we dehydrate them to add to dishes in the winter, we never have to many but we do share and swop with neighbours.

    Hi Liz, one of the things I do with my glut especially when they are too big to eat normally. I grate them, dehydrate or freeze dry them, then make it into a flour which you can then substitute up to 1/3 of normal flour in a recipe. No one will notice. Greetings from a hot Portugal.

    Makes a lovely filling for a pasty, add a bit more stock makes lovely soup or spice it up a little more for a base for curry or just as a side dish.
    4 Courgettes, ¾ teaspoon of Turmeric powder, ¼ teaspoon of Chipotle Chilli powder,
    1 Lemon and rind, 1 cup (250 ml) of frozen garden peas, 1 cup (250 ml) of Basmati Rice, 1 pint (600 ml) Stock and 1/3 pint (200 ml) of Hot water, add more if require a more liquid soup.

      Me too! I make chickpea salad with loads of diced cucumber, halved cherry tomatoes, finely sliced red onion, a tin of chickpeas, squeeze of lemon juice, tiny bit of tahini, salt, pepper and sprinkle of chilli flakes. Also panzanella salad with cucumber, red onion, cherry toms, avocado, black olives, basil, little red wine vinegar, garlic olive oil and cubes of slightly toasted bread mixed through the salad.

    I enjoy making lots of zucchini bread to share with family and friends. I enjoy a slice in the morning with a cup of coffee or warm tea. The bread will freeze up well. Grate extra for recipes. Goes good in chutney too.

    One of my favourite recipes with zucchini is Kolokithokeftedes, greek zucchini and feta fritters. Great taste, and you need quite a lot of zucchini for the recipe!

    Thank you I was thinking it would be nice to hear what people make with their harvest.We see you sow,weed and do all the hard work but not how younger them.

    A couple of years ago I did an entire dinner party with every dish featuring zucchini. I served zucchini chips and zucchini hummus, zucchini corn chowder with zucchini chili cornbread muffins, chicken enchilada casserole (subbing thinly sliced zucchini for the tortillas) topped with zucchini pico de gallo. And my favorite thing was zucchinicello which was also used in the Bundt cake. So, so good!

    What a great bunch of ideas! My favourite when the zucchini fairy is a little too generous is zucchini chocolate cake. You can also dehydrate zucchini and summer squashes quite easily, either sliced or shredded, and they're great in soups in winter, among other recipes.

    Cut the courgette into 2 or 3 pieces and quarter them so you have triangular batons. (With large courgettes you can cut them into 6 or 8 instead of quartering them). You can salt them and leave them to give out some of their water if you have time, but not essential.
    Brown them in batches in a little oil on both uncut sides. Set them aside, add some olive oil to the pan and fry some chopped garlic and chilli for a minute. Replace the courgettes, season with black pepper and add a good dash of balsamic vinegar. I like to let a few handfuls of spinach wilt in it if I have some. Can be eaten hot, warm or cold.

    I’ve actually canned them in tomato sauce and I was really surprised to find they do not turn to complete mush. Of course I do all the other stuff as well as dehydrate. I think it might be muffins tonight.

      I've actually seen them canned like that at the grocery store, although home grown was no doubt much better.

      My friend use to make a mac & cheese with the small cubes. Just adding flour to thicken it. It was wonderful. Ill do some experimenting, I think. 😆

    After about 4 attempts I have finally made acceptable courgette crisps. Practicing was a great way to use up my spare courgettes and now I have some homemade crisps. I wonder whether I shall ever be able to get them this crispy again?

    We love them sliced about 1 cm thick. Then place them on kitchen paper and under kitchen paper and squash them with the end of a rolling pin until a lot of the liquid is out.
    Then salt a little and fry in a frying pan with a little oil.
    We call them ‘Courgettes pretending to be Chips!’

    I make zucchini soup. Cook 2 pounds (900 gr.) cut up zucchini in a couple cups of water with 2 bouillon cubes, a small amount of chopped onion, half a teaspoon of salt and ¼ teaspoon pepper. Cook until very soft. Let the mixture cool enough that you can blend it to a smooth puree. Make a roux from 2 tablespoons butter and 2 tablespoons flour and pour the puree mixture in, stirring constantly. When thickened a little, check for seasoning and decide if it is thin enough. Then add ½ cup heavy cream. It can be served warm or cold. Sometimes I use 3 bouillon cubes.

    LOVED this video!!! Thank you!!! I'd love something similar for beets. I just learned I'm allergic to both brassicas and nightshades.... so my garden is beets and squash and beans, still plenty to play with, I just don't have much in the way of what to do with that distinct beet flavor. The greens are amazing and are replacing kale and cabbage as the nutrition bump in my salads. But I'd love to put some roots away for the winter.

      Lots of people with thyroid issues are told to avoid brassicas and nightshades. I'm very happy to share some great beet recipes and I had already started filming some bean recipes.

    Wow! Some excellent inspiration. With way too many zucchini (US) and not great luck growing eggplant, I often use zucchini as a base for an actual moussaka, which I dearly love. The little cups look like a wonderful alternatives for small portions. I also like to make zucchini bread, which is more like a coffee cake and probably similar to those muffins, but very much zucchini forward. Fully cooked and wrapped tightly, it freezes well, and thaws out beautifully for an easy contribution to the covered dish dinners that are so much a part of southern US social life, or even a nice hostess gift in the winter when they are a welcome reminder of summer.

      When I started out making videos I used a lapel mic (this exact make amzn.to/3Kc4Dnv) and nowadays I mostly use a Rode mic (this one amzn.to/3rxK8Lw). I recommend that you use a less expensive microphone while you are establishing your channel - I didn't buy equipment for my videos until I was earning enough money, through the videos, to pay for it.
