Honey Bran Muffins-Mimi's Cafe Copycat - but better!

- Hi there and welcome to my channel. In this video, I'm showing you how to make a copycat of Mimi's Honey Bran Muffins. I loved the muffins Mimi's used to offer but they stopped selling them years ago. Well, can I just say that these are even better?? Give them a try and let me know if you agree.
Ingredients:
2 cups raisin bran cereal, processed in the food processor to make about 1 cup
½ cup milk
1 cup flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/3 cup brown sugar (light or dark will work - I used light)
1/4 cup honey (Sorry! I said 1/2 cup in the vid!)
2 tablespoons molasses
1/4 cup vegetable oil
1 large egg
1 teaspoon vanilla extract
1 tablespoon grated orange zest
GLAZE:
3 tablespoons sugar
3 tablespoons brown sugar, packed
4 tablespoons butter, melted
2 tablespoons honey
1 teaspoon water
Makes 12 muffins*Bake 350 F for 15-20 minutes

I made this for the first time for my wife, she loved Mimi's Bran Muffin. They came out splendidly delicious. I noticed in the "More" section the recipe it calls for 1 Teaspoon of water for the Glaze but the audio on the video sounds like a tablespoon. I had to add about 1 ounce more of milk when stirring the Large bowl with all its ingredients. Other than that this was a well presented and delightful morning pastry when enjoyed buttered with coffee.

Now I know what to with my leftover molasses, we used it for making gingerbread cookies and didnt know how to use leftover. The muffins look super delicious and love the texture!

I know, right? It can crystalize of course but you can still use it in that state - if necessary, melt it in the microwave. But it won't spoil if you don't contaminate it (like putting a used spoon in it or whatever). Thanks Sonia.

Thank you 😋 I know you say you're not a baker and this is really handy for getting them all the same size...I suck at eye-balling things - I even weigh my cakes in the pans so I know they are even. The scoop is very helpful for me and I have several of them all different sizes for cookies and cupcakes, muffins, etc.

We just went to Mimis Cafe for my breakfast and they do still have the bran muffins, but no raisins. They are sooooo good! Cant wait to try your recipe.
Interesting! Mine stopped selling the bran muffins years ago and I was heartbroken. They are still my favorite but most of their muffins are quite delish! Thanks for your comment. I will check next time I go to Mimi's to see if the restaurants in my area have them again. I know they did not carry them for the last couple of years at least.
Hey Debbie, I wanted to let you know I checked the menu for my local Mimi's and they do indeed have the honey bran muffins back on the menu!! I promise you they stopped selling them for a time but I'm pleased they returned! Thanks for your comment. I will definitely get one next time I go.

Not sure Mimi's made it's way to your area yet Probably no room since you have so many other great restaurants in and near Chi-town. They used to also make a chocolate pecan pie, which I loved, and they stopped selling that too. I'm going to have to stop liking stuff so they'll stop getting rid of it. LOL
@@LetsBakeandCookStuff I looked up Mimi’s bc it sounded familiar. I’ve seen them in AZ and MO where we have family but I’ve never been. So now that you mention it, we might have to make a special trip next time :)

I was so excited when I was driving down a street in Allen Texas a few years ago and saw a building getting some renovation with a sign that said Mimi’s Cafe, I immediately called my kiddos to let them know that we would soon get to eat at Mimi’s. The last time I’d been to a Mimi’s in Northridge, Ca. I think I had liver and onions, and they were yummy! They were always busy, not sure why they left. 😩
Thanks for your comment. I'm also surprised that the restaurant closed down. I just love Mimi's. I just loved these muffins and was super disappointed when they decided to stop carrying them. But tragedy turned to triumph when I realized I can make them myself. I will tell you these are just as good (if not better). I looked it up and there are only 2 in the whole state of TX - one in Arlington and one in Fort Worth. Kind of a far trek from Allen. Have a Happy New Year!!

It’s a sad day when they stopped the Honey Bran muffins 💔 so love your take on the remake and much better portion control, so important these days! Well, hello 'another Mary"!! Glad to hear from you! I just looked at the bran from Bob's and I think it could work in these muffins although I have not tried it myself. I used bran cereal because it is readily available. I'd say if it looks to dry once your soak it, add a tablespoon or 2 or milk. And for sure if you try this, let me know how it turns out! I may try it myself - could be better. But these really are so good. And very close to the real Mimi's version. Thank you so much for your comments. I hope this helps. Mary

Sorry I think I was answering another comment. The answer is yes. I think you can use regular bran. I used Fiber One in the original.

What size of the ice cream scooper did you use? When you process the Raisin Bran cereal did you take out the raisin and add back in?
Hi and thanks for your interesting questions! I used a 3-tablespoon scoop for these muffins but a 1/4 cup scoop will probably work find. And, no, I didn't remove the raisins from the cereal and add them back. Thank so much for watching!! Mary

I'm making these tomorrow morning, I just went & got all the ingrediants. I secretly think Mimi's stopped making these because it was causing too much hassle on the wait staff as all they were doing is feilding orders for Bran Muffins rather then sitting down people to eat large meals. I wish instead they would have just started charging tripple the price, I would have paid it. Haven't been to Mimi's since they stopped their Bran Muffins.
