The pancake with sweet coconut filling is one of my favourite snacks. It is also a favourite breakfast or tea time snack in Malaysia. The only difference is the pancake batter has the extract of screwpine leaves added, giving the pancakes a green colour. The cake, I have not tasted before, so I am going to try baking it. I would love to taste that coconut cake. I have to say, you remind me of my Late Grand Mother. She made everything from scratch. No matter how labour intensive it was she did it. So we could try our cultural foods and desserts. You dont have no fancy electrical equipments, yet ,you as well make sure your children eat everything that you know they need to experience at their young age. Good on you Mrs Anoma. Hats off to you.
